- Makes 4 litres/7 pints
- • 2kg (4 and 1/2 lb) raw chicken carcasses, preferably free-range or organic, legs or wings chopped
- • 1/2 head of garlic, unpeeled and bashed
- • 5 sticks of celery, roughly chopped
- • 2 medium leeks, roughly chopped
- • 2 medium onions, roughly chopped
- • 2 large carrots, roughly chopped
- • 3 bay leaves
- • 2 sprigs of fresh rosemary
- • 5 sprigs of fresh parsley
- • 5 sprigs of fresh thyme
- • 5 whole black peppercorns
- • 6 litres (10 and 1/2 pints) cold water
Coq Au Riesling

French cooking w/ wine! An elegant casserole to serve to company
- * 6 chicken legs, split at the joint (or a 3 pound/1.4 kg chicken, cut into 8)
- * Salt and pepper
- * 1 tablespoon each of butter and olive oil (or 2 tablespoons goosfat)
- * 4 shallots, minced
- * 1 clove garlic minced
- * 2 tablespoons Cognac
- * 1 cup dry Riesling
- * 1/2 cup stock
- * 1 tablespoon butter, more if needed
- * 1/2 pound mushrooms, quartered
- * 1/2 cup crème fraîche or sour cream
- * Chopped parsley or tarragon, for garnish

- # 8 small new potatoes (or 4 medium potatoes, peeled and halved)
- # 4 carrots, peeled and halved lengthwise
- # 3 1/2 pounds boneless beef blade roast, cut into 1.5 inch cubes
- # 2 tablespoons olive oil
- # 2 onions, cut into wedges
- # 4 cloves garlic, peeled and halved
- # 2 tablespoons flour
- # 1 cup red wine
- # 1 1/2 cups chicken broth
- # 1 1/2 cups canned diced tomatoes
- # 3 branches fresh thyme

Cream of Mushroom Soup

- 1 stick Butter
- 2 pounds button mushrooms, rinced and sliced
- 3 onions, peeled and chopped
- a sprinkle or two sea salt and freshly ground pepper
- 1/2 bottle hearty red wine
- 4 cups chicken broth
- 1 cup heavy cream (35%)
- 1 tablespoon chopped fresh thyme
- 2 tablespoons cornstarch
- 1/4 cup water
Chicken Satays w/ Peanut Sauce

These are great for a party or an easy dinner
- Marinade:
- 8 Boneless, skinless chicken breasts.
- 2 Tbsp dry sherry
- 2 Tbsp soy sauce
- 2 Tbsp honey
- 1 Tbsp chopped ginger
- 1 tsp coriander
- 1 clove of garlic, crushed
- 1/4 cup vegetable oil
- Peanut Sauce:
- 4 tsp of canola oil 2 tsp sesame oil
- 1/2 cup red onion, minced
- 2 tsps minced garlic
- 1 Tbsp brown sugar
- 1 Tbsp red wine vinegar
- 1/3 cup peanut butter
- 1/2 tsp coriander
- 3 Tbsp ketchup
- 3 Tbsp soy sauce
- 1 Tbsp lemon juice
- 1/2 tsp pepper
Turkey con chilli

Try to think of this recipe as a principle, rather than something you have to follow really strictly
- • olive oil
- • 2 red onions, peeled and roughly chopped
- • 1 carrot, peeled and roughly chopped
- • 1 leek, trimmed and roughly chopped
- • 1 red pepper, deseeded and roughly chopped
- • 1 yellow pepper, deseeded and roughly chopped
- • 1 fresh red chilli, deseeded and finely chopped
- • 1 fresh green chilli, deseeded and finely chopped
- • a bunch of fresh coriander, stalks finely chopped, leaves picked
- • 1 teaspoon ground cumin
- • 1 heaped teaspoon smoked paprika
- • optional: 1 heaped teaspoon runny honey
- • optional: 3 tablespoons white wine vinegar
- • 600g leftover turkey, shredded
- • sea salt and freshly ground black pepper
- • 3 x 400g tins chopped tomatoes
- • 1 x 400g tin butter beans or chickpeas, drained
- • juice of 2 limes
- soured cream, to serve
- for the guacamole
- • 2 ripe avocados, peeled and destoned
- • 2 tomatoes, halved
- • ¼ of a red onion, peeled
- • ½ a garlic clove, peeled
- • 1 fresh green chilli, deseeded
- • a bunch of fresh coriander
- • juice of 1 lime

- * 4 ounces dried medium noodles
- * 2-1/2 cups chopped cooked chicken or turkey
- * 1 10-ounce package frozen chopped broccoli, thawed
- * 1/2 cup sliced green onions
- * 1 10-3/4-ounce can condensed cream of mushroom soup
- * 1/2 cup skim milk
- * 1/2 cup shredded Swiss cheese (2 ounces)
- * 1 teaspoon dried basil, crushed
- * 1/8 teaspoon pepper

- 2 tablespoons olive oil
- 1 onion, chopped
- 6 cloves garlic, minced
- 1 28 oz can crushed tomatoes
- 1 cup red wine vinegar
- 1 cup brown sugar
- 1 dash Worcestershire sauce
- 1 dash soya sauce
- 1 tablespoon Dijon mustard
- 1/2 teaspoon ground ginger
- 1/2 teaspoon chili powder
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/2 teaspoon caraway seed
- 1/2 teaspoon coriander
