Hash Brown Chicken Casserole

Heat the oven to 400 degrees
- 2 lbs frozen hash brown potatoes, Southern Style
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt and pepper
- 1 cup frozen peas and carrots
- 1/2 cup summer sweet corn, canned
- 2 C sour cream or plain yogurt
- 1 can cream of chicken soup
- 1/3 cup milk
- 3 cups cooked, shredded roasted chicken
- Bread crumbs or Corn Flake crumbs
Hazelnut Chocolate Cake

Preheat the oven to 375 degrees F
- 7 tablespoons unsalted butter, room temperature, plus more for greasing pan
- 1 tablespoon cocoa powder
- 1 cup hazelnuts
- 3 ounces chocolate (I like to use dark chocolate 65 to 75-percent), broken into pieces
- 6 large eggs, separated
- 1/4 teaspoon sea salt (I like the salt from Trapani)
- 13 ounces chocolate hazelnut spread, such as Nutella
- 2 tablespoons espresso
- Powdered Sugar, for dusting
- Sweetened whipped cream, optional
- Gelato, optional
- Special equipment: 9- by 3-inch springform pan

Preheat oven to 375°F. Spray a 13×9-inch (3-quart) glass baking dish with cooking spray

- 2 cans (12.4 oz each) Pillsbury® refrigerated cinnamon rolls with icing
- 4 eggs
- 1/2 cup heavy whipping cream
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- 1/2 cup chopped pecans (you can use more or less according to your liking)
- 1/4 cup maple syrup

- 3 tbsp chicken broth or water
- 1-1/2 lb boneless skinless, chicken thighs , cut into 1-inch pieces

- 1-1/2 tbsp vegetable oil
- 1 small onion, cut into 1-inch pieces
- 4 garlic cloves, minced
- 2 tbsp rice vinegar

Summer Shrimp Salad

Whisk together the mayonnaise, mustard, lime juice, salt, pepper, garlic powder, and cilantro in a large bowl
- 2/3 cup mayonnaise
- 1 tsp Dijon mustard
- Juice of 1 lime
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 3 Tbsp chopped fresh cilantro
- 2 (14-oz) bags frozen, fully cooked salad shrimp, thawed
- 1/2 cup finely chopped red onion
- 3 celery stalks, finely chopped
- 1 jalapeño, seeded and minced
- 2 vine-ripe tomatoes, seeded and finely chopped
Lentil-Veggie Burgers

Combine all ingredients in a large, heavy saucepan
- Tahini Dressing:
- 1/2 cup (3 oz) brown rice, uncooked
- 1/2 cup (3 oz) barley, uncooked
- 1/2 cup (3 3/4 oz) lentils, uncooked
- 4 3/4 cups water
- 1/2 cup coarsely shredded carrots
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped celery
- 1 tsp. dried oregano
- 1/2 tsp. cayenne pepper
- 1 1/4 tsp. garlic powder
- 1/2 tsp. paprika
- 3/4 tsp. salt
- 1/2 cup tahini
- 1/2 cup water
- 1 tbs. soy sauce
- 1 tbs. lemon juice
- 1/8 tsp. garlic powder
- 2 tsp. dried chives
- Place tahini in a small bowl. Gradually add water, stirring until blended. Add remaining ingredients, mixing well; chill.
Cappuccino Smoothie (Vitamix)

Place espresso, milk, ice cream, and ice into the Vitamix container in the order listed and secure lid
- 1 cup espresso, cold
- 1/2 cup milk
- 1/2 cup coffee ice cream
- 1/4 cup crushed or cracked ice
- 1/4 cup heavy cream, whipped
- 1/4 tsp ground cinnamon, or as needed
Mexican Lasagna (Rachael Ray)

- 3 tablespoons extra-virgin olive oil
- 2 pounds ground chicken breast, available in the packaged meats case
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1/2 red onion, chopped
- 1 (15-ounce) can black beans, drained
- 1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
- 1 cup frozen corn kernels
- Salt
- 8 (8 inch) spinach flour tortillas, available on dairy aisle of market
- 2 1/2 cups shredded Cheddar or shredded pepper jack
- 2 scallions, finely chopped
Raspberry Lemonade

- 4 cups fresh lemon juice
- 3 cups sugar
- 1 bag frozen raspberries
- Ice cubes, for serving
