Mint Pesto

Blend all the ingredients in a small food processor or chopper until finely chopped
- 4 packed cups mint leaves
- 1/3 cup blanched almonds
- 2 garlic cloves, roughly chopped
- 1/4 cup olive oil, plus more if necessary
- Kosher salt and freshly ground black pepper
- makes 2/3 cup
Taco Pasta Salad

Cook pasta according to package directions
- 3/4 pound pasta, cooked according to package directions (small shells, rotini, bowtie, etc.)
- one 15-ounce can black beans, drained and rinsed (I used no-salt added)
- 2 cups Mexican shredded cheese blend
- 1 1/2 about 1 1/2 cups sliced cherry or grape tomatoes
- 1 1/2 cups corn (fresh or frozen)
- 1/2 cup green onions, sliced into thin rounds
- 1/2 cup fresh cilantro, finely minced
- 1 or 2 medium/large Hass avocados, peeled and diced small
- 1/3 cup olive oil
- 1/3 cup Santa Cruz Organic Lime Juice®
- 1/4 to 1/3 cup honey or agave
- 3 tablespoons taco seasoning (I use reduced-salt, medium heat)
- 1 or 2 cloves garlic, minced or finely pressed
- 1 teaspoon kosher salt, or to taste
- 1 teaspoon freshly ground black pepper, or to taste
- Santa Cruz Organic® Lemonades, Agua Frescas, and Carbonated Lemonades for serving

Preheat the oven to 350°
- 9 ounces pure almond paste
- 2 large eggs
- 6 tablespoons unsalted butter, melted and cooled slightly
- 3 1/2 tablespoons cornstarch, sifted
- 1 1/4 teaspoons baking powder

- 1 1/2 tablespoons granulated sugar

German Potato Salad

Place the potatoes into a pot, and fill with enough water to cover
- 3 cups diced peeled potatoes
- 4 slices bacon
- 1 small onion, diced
- 1/4 cup white vinegar
- 2 tablespoons water
- 3 tablespoons white sugar
- 1 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley

Move an oven rack to the bottom of the oven and preheat to 300°F
- 3 cups half-and-half
- 4 large eggs
- 1/2 cup granulated sugar
- 1 Tbsp vanilla extract
- 3/4 tsp ground cinnamon
- 1/2 tsp salt
- 1 –1/2 lbs store-bought, already baked cinnamon rolls, cut into 2" pieces
- 2 Granny Smith apples, peeled, cored, and chopped into 1" pieces
