Avocado Pasta Recipe

Bring a pot of salted water to the boil and cook pasta according to package directions
- 8 ounces dry pasta
- 1 medium tomato, diced
- 1 green onion, finely sliced
- 1 large ripe avocado
- 1/4 teaspoon finely grated garlic
- Juice from 1/4 of a lemon
- Salt and fresh ground pepper, to taste

In a food processor, pulse together the nuts, flour, cornmeal, and salt until finely ground and smooth
- 1 1/4 cups pine nuts, toasted 1 1/2 cups all-purpose flour 1/2 cup cornmeal
- 1/4 teaspoon salt
- 2 sticks (1 cup) unsalted butter, softened
- 1/2 cup powdered sugar, plus 1 cup for rolling
- 1 tablespoon fresh lemon juice 1 teaspoon lemon zest, plus 2 teaspoons
- 1 teaspoon vanilla extract
