Crostini With Blistered Cherry Tomatoes, Burrata and Chive Oil Recipe

The building blocks of a classic Caprese salad are re-imagined in these summery toasts
- 1 1 1/4 1 large bunch fresh chives (2 1/4 ounces/65g)
- 1/2 1/2 1/2 cup canola or other neutral oil
- 2 2 1/4 pints heirloom cherry tomatoes (1 1/4 pounds/565g)
- 1/2 1/2 1/2 cup extra-virgin olive oil (120ml), plus more for drizzling and brushing
- 3 3 cloves 3 medium cloves garlic, sliced
- Kosher salt and freshly ground black pepper
- 1 1 1/4 baguette, cut on a bias into about twelve 1/4 inch thick slices
- 1 1 1 large ball burrata (see note), torn into large chunks
- Micro greens or minced chives, for garnish (optional)

Heat oven to 400 degrees F
- 10-12 wontons
- 1 Tablespoon sesame oil
- 1 teaspoon sesame seed (optional)
- 4 ounces cooked lump crab, (can use imitation crab)
- 2 Tablespoons mayonnaise
- 1/2 Tablespoon sriracha hot sauce, plus additional for serving
- 1 jalapeño, sliced (optional)
- 2 green onions, sliced (just the green parts)
Thai-Style Shrimp Cakes With Sweet Chili Dipping Sauce Recipe

1. Coarsely chop shrimp into 1/2-inch pieces
- 1 1 1 pound (500g) medium or large shrimp, shelled and de-veined
- 3 3 3 scallions, thinly sliced
- 2 2 2 medium garlic cloves, minced or grated
- 1 1 1 jalapeño pepper, seeded and minced
- Large handful Large handful fresh cilantro leaves and tender stems (plus extra for garnish)
- 1 grated zest of 1 lime
- Kosher salt
- 1 1 1 tablespoon (15ml) mayonnaise
- 2 2 2 tablespoons (20g) cornstarch
- 1 1 1 large egg white
- 1/4 to 1/2 1/4 to 1/2 to 200g) (100 to 200g) panko-style breadcrumbs

- BUTTER SAUCE:
- 1 cup butter, softened
- 2 cups sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 /2 teaspoon baking soda
- 1 /2 teaspoon salt
- 1 cup buttermilk
- 1 cup sugar
- 1 /2 cup butter, cubed
- 1 /4 cup water
- 1 -1/2 teaspoons almond extract
- 1 -1/2 teaspoons vanilla extract

- Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick inserted in center comes out clean, 55-70 minutes. Cool 10 minutes. Run a knife around edges and center tube of pan. Invert cake onto a wire rack over waxed paper.
- For sauce, combine the sugar, butter and water in a small saucepan. Cook over medium heat just until butter is melted and sugar is dissolved. Remove from the heat; stir in extracts.
- Poke holes in the top of the warm cake; spoon 1/4 cup sauce over cake. Let stand until sauce is absorbed. Repeat twice. Poke holes into sides of cake; brush remaining sauce over sides. Cool completely.
- Test Kitchen tips
- Make cake slicing simple (with no squishing or tearing) by using a long serrated knife. Gentle pressure and a back-and-forth motion work best.
- Use a pastry brush to sweep away excess flour after flipping the cake out of the pan.
