Brussels Sprouts With Bacon Jam

Cook bacon in a large skillet over medium-low, stirring occasionally, until brown and crisp, about 15 minutes
- For Bacon Jam:
- 1 pound thick-cut bacon, cut into 1/4-inch strips
- 1 large onion, finely chopped
- 1 garlic clove, finely chopped
- 3/4 cup granulated sugar
- 1/2 cup (packed) dried apricots (4 ounces), roughly chopped
- 1/4 cup sherry vinegar
- 1 sprig thyme
- 3 sprigs rosemary
- 1 bay leaf
- Kosher salt
- Freshly ground black pepper
- For the Brussel Sprouts:
- Kosher salt
- 16 medium Brussels sprouts (12 ounces), trimmed and halved
- 2 tablespoons olive oil
- 2 garlic cloves, smashed
- 4 sprigs thyme
- 32 small skewers or toothpicks

- Chile Vinegar:
- 1/3 cup white vinegar
- 1 serrano chile, stemmed and sliced into thin rings
- Stir Fry:
- Salt
- Sugar
- 2 radishes, cut into 1 1/2 -inch by 1/4-inch matchsticks (about 1/3 cup)
- 8 ounces (1/4-inch-wide) dried rice noodles
- Vegetable oil
- 1/4 cup fish sauce
- 3 tablespoons tamarind concentrate
- 1 pound large shrimp (26-30), peeled and deveined
- 4 scallions, white and light green parts minced (2 tablespoons), dark green parts cut into 1-inch lengths (1/2 cup)
- 1 garlic clove, minced
- 4 large eggs, beaten
- 4 ounces (2 cups) bean sprouts
- 1/4 cup roasted unsalted peanuts, chopped coarse

Cook pasta until al dente
- Dressing:
- 1 pound pasta of your choosing (I used cavatappi)
- 2 cups cherry tomatoes, halved
- 1 large avocado, seeded and diced
- 1 1/2 cups sweet corn
- 6-8 slices bacon, cooked
- 5 tablespoons chives, minced
- 4 ounces crumbled blue cheese
- 4 hardboiled eggs, diced
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 6 tablespoons red wine vinegar
- 6 tablespoons olive oil
- 2 small garlic cloves, grated
- 2 tablespoons Dijon mustard
- 1 teaspoon honey
- Pinch of salt and Pepper
4-Ingredient Easter Egg Oreo Truffles

Add the Oreos to a food processor, and pulse until evenly crumbled
- 1 package classic Oreos
- 1 (8 oz.) brick cream cheese, softened
- 8 oz. (about 2 cups) dark or semisweet chocolate chips, melted (*see note below)
- 4 oz. white almond bark, melted

- 3-1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 pound ground beef
- 1 small onion, chopped
- 1 can (15 ounces) tomato sauce
- 3 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 medium green pepper, diced
