- 3/4 cup mayonnaise
- 3 tablespoons capers, drained
- 2 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh tarragon
- 1 tablespoon fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- 1/4 teaspoon hot sauce, such as Tabasco, optional
- 1 cup self-rising flour
- 1/4 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup beer, such as amber ale, at room temperature
- Vegetable oil, for frying
Mesa Grill's Southwestern Potato Salad
