Beef and Wild Rice Casserole

This is my own spin on a Trisha Yearwood recipe
- Two 6-ounce boxes long-grain and wild rice mix, such as Uncle Ben's
- 1 cup (2 sticks) unsalted butter, plus more for greasing dish
- 16 ounces fresh mushrooms, sliced, or two 4 1/2-ounce cans sliced mushrooms, drained (reserve the liquid)
- 1 small onion, chopped
- 3/4 cup all-purpose flour
- 3 cups beef broth
- 3 cups half-and-half
- 2 lbs ground beef
- 4 oz Hatch green chilis from the can
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Breaded Chicken Cutlets

Pound out chicken breasts to 1/4" thick
- 3 lbs boneless, skinless chicken breasts
- 1 1/2 cups milk
- 2 cups plain breadcrumbs
- 2 cups cornflakes, crushed
- 1 tbsp poultry seasoning
- 1 tsp dried thyme
- Salt/pepper
- Oil for frying
Maple-Mustard Ham Rolls with Mac and Cheese

Prepare Stove-Top Macaroni and Cheese as directed; cool slightly
- 4 cups Stove-Top Macaroni and Cheese (see recipe, page 131
- Nonstick cooking spray
- 1/2 cup pure maple syrup
- 1/4 cup country Dijon-style mustard
- 2 teaspoons cider vinegar
- 1 teaspoon snipped fresh thyme
- 1/4 teaspoon salt
- 1/2 cup panko (Japanese-style bread crumbs)
- 1 tablespoon butter, melted
- 16 thin slices cooked ham (8 ounces)

- 9 tablespoons butter
- 2 tablespoons olive oil
- 4 boneless skinless chicken breasts
- 2 1/4 teaspoons salt
- 1 1/4 teaspoons freshly ground black pepper
- 1 pound white mushrooms, sliced
- 1 large onion, finely chopped
- 5 cloves garlic, minced
- 1 tablespoon chopped fresh thyme leaves
- 1/2 cup dry white wine
- 1/3 cup all-purpose flour
- 4 cups whole milk, room temperature
- 1 cup heavy whipping cream, room temperature
- 1 cup chicken broth
- 1/8 teaspoon ground nutmeg
- 12 ounces linguine
- 3/4 cup frozen peas
- 1/4 cup chopped fresh Italian parsley leaves
- 1 cup grated Parmesan

Buttermilk-Chive Dressing

Combine the buttermilk, sour cream, mayonnaise and lemon juice in a small bowl and whisk well
- 1/2 cup buttermilk
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1/2 lemon, juiced
- 3 tablespoons thinly sliced chives
- 1 garlic clove, minced
- Kosher salt and freshly ground black pepper
Golden Rum Cake

Preheat oven to 325 degrees F
- 1 cup chopped walnuts, optional
- 1 (18.25 ounce) package yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup dark rum
- 1/2 cup butter
- 1/4 cup water
- 1 cup white sugar
- 1/4- 1/2 cup dark rum (I used 1/2 cup just because I like rum!)
Honey-Glazed Pork Roast

Preheat oven to 350 degrees F
- 2 teaspoons smoked paprika or paprika
- 2 teaspoons coarse kosher salt
- 1 3 pound bone-in pork roast, ribs removed and tied back on
- Fresh oregano sprigs
- 3 small red and/or yellow sweet peppers, stemmed, seeded, and quartered
- 1 small green pepper, stemmed, seeded, and quartered
- 1 tablespoon olive oil
- Salt and pepper
- 1/3 cup honey
- 1/4 cup lime juice
- Fresh oregano and/or thyme sprigs

Use the chocolate cake mix, oil, water & eggs to make cupcakes
- 1 box chocolate cake mix
- Oil, water & eggs for the cake mix
- 2 tubs chocolate frosting
- 1 package Oreo cookies
- Orange & brown M&Ms
Trick-or-Treat Brownie Cupcakes

Heat oven to 350°F. Spray 24 regular-size muffin cups with cooking spray
- 1 box (1 lb 2.3 oz) Betty Crocker™ fudge brownie mix
- 1/2 cup vegetable oil
- 2 tablespoons water
- 2 eggs
- 1 cup white vanilla baking chips (6 oz)
- 1 3/4 cups powdered sugar
- 6 tablespoons butter or margarine, softened
- 3 tablespoons milk
- 6 to 8 drops red food color
- 6 to 8 drops yellow food color
- 24 miniature candy bars
Chocolate Buttermilk Cupcakes w/Cream Cheese Frosting

I also like to dip these in Chocolate Ganache instead of the Cream Cheese Frosting
- Cream Cheese Cheese Frosting:
- 1/4 cup water
- 3 1/2 tablespoons best quality unsweetened cocoa powder
- 1 cup unsalted butter, room temperature
- 1 3/4 cups sugar
- 2 large eggs
- 2 cups cake flour
- 1 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons vanilla extract
- 2 cups buttermilk
- 1 tablespoon distilled white vinegar
- 1/2 cup butter, softened
- 8 oz cream cheese, softened
- 1 lb powdered sugar
- 1 tsp vanilla
