Halloween Gorp

In 7-quart or other large container with cover, mix all ingredients; cover tightly
- 1 bag (16 oz) candy corn
- 1 bag (16 oz) pretzel nuggets
- 1 package (15 oz) dried banana chips or dried apple slices
- 1 package (15 oz) candy-coated chocolate candies (2 cups)
- 1 box (12 oz) caramel popcorn and peanuts
- 2 packages (5 oz each) milk chocolate-covered pretzels
- 1 cup gummy worm candies
- 1 cup sesame sticks
- 1 cup raisins
Au Gratin Potato Pancakes

In a large bowl, combine the first eight ingredients
- 2 cups mashed potatoes (without added milk and butter)
- 1 egg, lightly beaten
- 1 tablespoon minced chives
- 1 teaspoon minced fresh parsley
- 3/4 teaspoon salt
- 1/8 teaspoon dried minced garlic
- 1/8 teaspoon pepper
- Dash dried rosemary, crushed
- 1/2 cup shredded sharp cheddar cheese
- 4 tablespoons canola oil, divided
Carrot Cheesecake

Directions For the carrot cake: Adjust an oven rack to the middle position and preheat to 350 degrees F
- Carrot Cake:
- 1/2 cup pecan halves, plus more, chopped, for garnish
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Kosher salt
- 1/2 cup vegetable oil
- 1/2 cup sugar
- 2 large eggs
- 1 1/2 cups shredded carrot (2 to 3 medium carrots)
- Cheesecake:
- Three 8-ounce packages cream cheese, softened
- 2/3 cup sour cream
- 2/3 cup granulated sugar
- 3 large eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon lemon zest plus 2 tablespoons lemon juice (from 1 lemon)
- 1 teaspoon pure vanilla extract
- Sour Cream Topping:
- 1/2 cup confectioners' sugar
- 2 tablespoons sour cream
- 1/4 teaspoon pure vanilla extract
- Pinch kosher salt
Poblano-Chorizo Strata

In a large skillet cook chorizo over medium heat until browned
- 1/2 pound uncooked chorizo sausage
- 2 medium onions, thinly sliced
- 2 fresh poblano chile peppers, seeded and thinly sliced*
- 1 red sweet pepper, thinly sliced
- 8 cups 1-inch cubes Mexican bolillo rolls or crusty Italian bread
- 6 eggs, lightly beaten
- 2 1/2 cups milk
- 1 teaspoon Mexican oregano or regular oregano, crushed
- 1/2 teaspoon paprika
- 1/2 cup queso fresco, crumbled
- Snipped fresh cilantro (optional)
Eggnog-Frosted Nutmeg Sugar Cookies

Using the tip of a sharp knife, scrape pulp from vanilla bean; set aside
- Eggnog Icing:
- 1/2 vanilla bean, split in half lengthwise, or 2 teaspoons vanilla
- 1 1/4 cups butter, softened
- 1 cup sugar
- 1 1/2 teaspoons baking powder
- 1 freshly grated nutmeg or 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 egg
- 1 tablespoon dairy or canned eggnog
- 3 1/4 cups all-purpose flour
- 3 cups powdered sugar
- 1/2 teaspoon vanilla
- 3 tablespoons dairy or canned eggnog or milk
Banana Pudding Cake

Cake: Preheat the oven to 350 degrees F
- Cake:
- Nonstick cooking spray, for spraying the pan
- All-purpose flour, for dusting the pans
- 3 ripe bananas
- 2 teaspoons freshly squeezed lemon juice
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 3 large eggs
- One 11-ounce box vanilla wafers, crushed
- 1 cup buttermilk
- 2 teaspoons vanilla extract
- Filling:
- 2 large eggs
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon cornstarch
- Pinch salt
- 1 cup milk
- 1/4 teaspoon vanilla extract
- Confectioners' sugar, for sprinkling

- 1 3/4 cups all-purpose flour
- 1/4 cup packed brown sugar
- 1/2 cup butter
- 3/4 cup miniature semisweet chocolate pieces
- 1 1/3 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt

Posole Mexican Lasagna

Preheat oven to 400 degrees
- 2 tbsp EVOO
- 2 lbs ground sirloin
- 1 tbsp cumin
- 1 tbsp coriander
- Salt/pepper
- 15oz can hominy
- 1 large red onion, chopped
- 4 cloves garlic, grated
- 15 small tomatillos, shell removed and coarsely chopped
- Handful cilantro leaves
- 3 avocados
- 2 limes, juiced and zested
- 2 tbsp honey
- 10 large (burrito size) four tortillas
- 2 cups Pepper jack cheese, shredded

- 2/3 cup all-purpose flour
