- 2 slices deli ham, thinly sliced and cut into strips
- 3 large eggs
- 2 TBS olive oil
- 1/4 cup water
- 1/4 cup manchego cheese, shredded
- 1 tsp chives, chopped coarsely
- Salt and pepper to taste
- Hot pepper sauce to taste
