Take a vacation with these Florida Citrus Crepes
- Filling:
- 2 cups milk
- 1 vanilla bean, split lengthwise
- 1/2 cup sugar
- 2 tablespoon cornstarch
- dash of salt
- 3 large egg yolks
- 1/2 cup sour cream
- Crepes:
- 1/2 cup milk
- 5 tablespoon water
- 2 tablespoon butter, melted
- 1/2 teaspoon vanilla extract
- 1 large egg, lightly beaten
- 2/3 cup flour
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- Citrus topping:
- 1 cup navel orange sections
- 1 cup red grapefruit sections
- 2 TBS chopped fresh mint
- 1/4 cup sugar
- Garnish:
- 1 tablespoon confectioner's sugar
- 8 mint sprigs (optional)

- 1 lb small red potatoes (6-8)
- 3 TBS butter, cubed
- 1 1/2 TBS lemon juice
- 1/2 tsp salt
- 1/2 tsp grated lemon peel
- 1 TBS minced fresh parsley
- Salt and pepper to taste

1. Cook tortellini according to package directions; drain and rinse in cold water
- 1 (8 ounce package) refrigerated cheese tortellini
- 1/2 cup Italian Salad Dressing
- 6 thin slices (4 ounces) provolone cheese, cut into small squares
- 50 thin slices salami
- 50 Pimiento Stuffed Olives

- 3/4 cup graham cracker crumbs
- 2 tablespoons brown sugar
- 2 tablespoons finely chopped pecans

- 3 large eggs
- 1 can sweetened condensed milk, 14 ounces
- 3/4 cup water
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
Creamy Tuna Noodle Casserole with Peas & Breadcrumbs

1. Preheat broiler to low
- 6 ounces uncooked egg noodles
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 cup finely chopped onion
- 1 cup thinly sliced celery
- 3 tablespoons flour
- 2 1/4 cups milk
- 1/2 cup frozen green peas, thawed
- 1 1/2 tablespoons chopped fresh dill
- 1 teaspoon finely grated lemon rind
- 1 tablespoon fresh lemon juice
- 1 teaspoon dry mustard (such as Colman's)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 (5-ounce) can solid white albacore tuna packed in water, drained and broken into chunks
- 1/4 cup panko (Japanese breadcrumbs)
- 1.5 ounces Parmesan cheese, grated (about 1/3 cup)

1. Melt butter in a large soup pot
- 1 TBS butter
- 1 large white onion, coarsely chopped
- 1 carrot, coarsely shredded
- 1 clove garlic, peeled and smashed
- 3 thyme sprigs
- 1/2 tsp ground coriander
- 4 cups chicken stock
- 3 cans (15 oz) cannellini beans, drained
- 1 lb smoked ham, in one piece
- Kosher salt and pepper to taste
