Low Carb Hershey Pie

Like a striped delight dessert
- Crust:
- 1 cup almond flour
- 1/2 cup cocoa
- 3/4 cup granular erythritol
- 4 tblsp melted butter
- Filling:
- 1 package of sugar free chocolate pudding (I use already made cups of sugar free chocolate jello pudding)
- 1 cup heavy cream
- 8 oz. cream cheese
- 1 cup powdered erythritol
Butter Cream Icing - Ava

Sift sugar into mixing bowl, add butter and cream mixture
- 1 box powdered sugar
- 1/2 cup butter
- 1 egg white
- 1/4 tsp salt
- 1/4 cup milk
- 1 tsp vanilla
Charred Chicken Thighs and String Beans

- 4 chicken thighs (boneless, skin-on)
- 1/2 tablespoons olive oil (divided)
- 2 cups green beans (ends trimmed)
- 2 cups white string beans (ends trimmed)
- 1 tablespoon dijon mustard
- 3 tablespoons red wine vinegar
- 1/2 cup tarragon (finely chopped)
- kosher salt and freshly ground black pepper (to taste)
Hash Brown Potato Cakes

Preheat oven to 300 degrees F
- 1 pound russet or round red potatoes
- 1/2 of a medium onion, very thinly sliced
- 1 tablespoon olive oil
- 2 teaspoons snipped fresh thyme or 1/4 teaspoon dried thyme, crushed
- 1/4 teaspoon salt
- 1/8 teaspoon ground black pepper
- Nonstick cooking spray
Butter Pecan Fudge

What To Do: Coat an 8-inch square baking dish with cooking spray
- 1/2 cup (1 stick) butter
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/8 teaspoon salt
- 1 cup pecan halves, toasted (see Note)
- 1 teaspoon vanilla extract
- 2 cups confectioners' sugar

Preheat oven to 350°F. Grease the bottom of a 13x9x2 inch baking pan; set aside
- 1 19-21 oz. pkg. fudge brownie mix
- 1 10-12 oz. pkg. white baking pieces
- 1 cup semisweet chocolate pieces
- 1/2 cup pecan pieces
- 1/4 cup butter, melted
- 3 tablespoons hot water
- 2 cups sifted powdered sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon vanilla
- 3/4 cup pecan pieces
Southern-Style Brisket

- 1/2 cup barbecue sauce
- 1/2 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup firmly-packed light brown sugar
- 1/3 cup water
- 1 (1-ounce) envelope onion soup mix
- 1 4- to 5-pound beef brisket
Crock Pot Chicken and Dressing

Recipe from Mommy's Kitchen
- 1 - recipe homemade cornbread (9 x 13 in) or
- 2 - packages yellow cornbread mix, prepared
- 5 - boneless, skinless chicken breasts, cooked or use cooked rotisserie chicken
- 2 - slices bread, hamburger or hot dog buns, toasted & broken into pieces
- 2 - eggs, hard boiled
- 1 - small onion, chopped
- 2 - stalks celery, chopped
- 1 - 2 teaspoons sage, to your taste
- 1 - 2 teaspoons poultry seasoning, to your taste
- salt and pepper, to taste
- 2 - 10.5 oz cans cream of chicken soup
- 1 - stick (1/2 cup) butter or margarine, melted
- 2 - cups low sodium chicken broth or homemade
Quick Italian Cream Cake

Beat first 4 ingredients at medium speed with an electric mixer 2 minutes
- 1 (18.5-ounce) package white cake mix with pudding
- 3 large eggs
- 1 1/4 cups buttermilk
- 1/4 cup vegetable oil
- 1 (3 1/2-ounce) can flaked coconut
- 2/3 cup chopped pecans, toasted
- 1 tsp. vanilla (I use clear)
- Cream Cheese Frosting
- 1 15-16 oz can real cream cheese frosting
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup butter or margarine, softened
- 1 (16-ounce) package powdered sugar
- 2 teaspoons vanilla extract
- 1 cup chopped pecans, toasted
- Toasted coconut to taste (optional, about 1/2 can coconut)
Rita's Pineapple/Pecan Fruitcake

Make cake Preheat oven to 350°F
- Frosting:
- 2 cups sugar
- 2 cups flour
- 2 eggs,
- 2 tsp baking SODA
- 1 cup chopped walnuts or without nuts)Can use pecans if prefer.
- 1- 20 oz. Can of crushed pineapple.
- Mix together w/fork & bake in greased 9 x 13 pan 30-40 min. ( I usually do the whole 40..cake is a dark brown color.
- 1-8 oz. Cream cheese
- 1 stick butter softened
- 2 cups powdered sugar (1 box)
- 1 tsp vanilla.
