Fiesta Nachos

Such a great and easy way to have nachos
- 1 can Fiesta Nacho Soup
- 1/2 can milk
- 1 jar Tostito Queso Dip
- 1 lb. hamburger meat
- Tortilla chips
Chicken Enchilada Dip Roll-Ups

Perfect for a snack or appetizer, these Chicken Enchilada Dip Roll-Ups are the best!
- 2 - 8 ounce packages cream cheese, softened
- 1 1/3 cup shredded Mexican blend cheese
- 1 teaspoon garlic, finely minced (I used my garlic press)
- 1 1/2 tablespoons chili powder
- 1 teaspoon cumin
- Cayenne pepper, to taste
- Salt to taste
- 1 Rotisserie chicken, skinned and shredded - If you can find a southwest flavored chicken, that would be even better.
- 1/2 bunch cilantro, chopped
- 4 green onions, chopped
- 10 ounce can Rotel tomatoes
- 1 package jalapeno cheddar tortillas
Joe's Key Lime Pie

Preheat oven to 350 degrees F
- 3/4 cup graham cracker crumbs
- 5 tablespoons butter, melted
- 1/3 cup sugar
- 3 egg yolks
- 1 1/2 teaspoons grated lime zest
- 1 (14-ounce) can sweetened condensed milk
- 2/3 cup Key lime juice (see Tips)
Pecan Chicken Salad

Mix all ingredients and stir together, enjoy!
- 4 cups chicken breast chopped or 2-15oz. cans
- 1 1/2 cups sliced seedless grapes (red or white)
- 3/4 cup chopped celery (this is a little too much for me, I'd reduce to 1/2 cup or less)
- 1 Tbs sugar
- 1 Tbs Worcestershire sauce
- 1 Tbs lemon juice
- 3/4 cup pecans
- 1 cup mayonnaise
Old-Fashioned Corn Chowder

If you're a fan of rich and creamy soups that don't take a lot of work, you're in luck
- 6 slices bacon
- 1 cup chopped onion
- 4 red potatoes, cubed
- 1 cup water
- 2 (14.75-ounce) cans cream-style corn
- 3 cups half-and-half
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Sunrise Mini Pizzas Recipe

In a bowl, beat the eggs. Add milk, salt and pepper
- 8 to 10 eggs
- 3 tablespoons milk
- Salt and pepper to taste
- 1 tablespoon butter
- 10 frozen bread dough dinner rolls, thawed
- 10 bacon strips, cooked and crumbled
- 2 cups (8 ounces) shredded cheddar cheese
Sweet Corn Coleslaw

Mix together and serve. Serves 6 to 8 people
- 3/4 cup light sour cream
- 1/4 cup milk
- 1 tsp lemon juice
- 2 Tbsp white wine vinegar
- 3/4 cup sweet corn kernels (thawed if frozen)
- 1/4 cup chopped basil
- salt and pepper
- 1 bag shredded cabbage and carrots.
Simple Lemon Herb Chicken

Directions Cut lemon in half, and squeeze juice from 1/2 lemon on chicken
- 2 skinless, boneless chicken breast halves
- 1 lemon
- salt and pepper to taste
- 1 tablespoon olive oil
- 1 pinch dried oregano
- 2 sprigs fresh parsley, for garnish
Hash Brown Breakfast Nests

1. Spray a 12 cup muffin tin with non-stick spray
- Hash Brown Nests
- 20 oz bag refrigerated shredded hash browns
- 4 Tbsp vegetable or olive oil
- 1 tsp kosher salt
- 1/2 cup grated sharp cheddar cheese
- pinch ground black pepper
- Filling
- 6 large eggs
- 3 Tbsp heavy cream or half and half
- pinch of kosher salt and ground pepper
- 1/2 cup cooked and crumbled bacon
- 1 cup shredded Swiss cheese (or melting cheese of your choice)
- 1 packed cup of chopped fresh spinach leaves
