- For the sauce:
- ¾ cup water
- 1/2 2 raw, unsalted cashews (about 2 oz.)
- 1 1½ white beans (15 ounces; about 1½ cups), drained and rinsed
- 3 tablespoons lemon juice
- 1 to 1/4 garlic (Pam decreased to 1/4 tsp)
- to 1/4 ground white pepper (Pam decreased to 1/4 tsp)
- to teaspoon freshly ground nutmeg (or a pinch to ¼ teaspoon preground)
- 1 ounce cashews, walnuts, or pine nuts (about ¼ cup; for optional garnish)
- Chopped parsley (for optional garnish)

Baby Greens and Edamame With Miso Dressing

Heat sesame oil in small sauté pan; add mushrooms and salt, stirring until mushrooms are browned, about 2 minutes
- 1 Tbsp. sesame oil
- 10 medium shitake mushrooms, thinly sliced
- 1/2 tsp. sea salt
- 1 head butter leaf lettuce, chopped
- 2 cups mixed baby greens
- 2 cups shelled edamame, cooked and cooled
- 3 green onions, thinly sliced
- 1 Tbsp. sesame seeds
- MISO DRESSING
- 1/3 cup orange juice
- 2 Tbsp. lite soy sauce
- 2 Tbsp. rice vinegar
- 2 Tbsp. honey
- 2 Tbsp. white or yellow miso paste
- 1 Tbsp. canola oil
- 1 Tbsp. water
Hearty Greek Pasta

Brown chicken in oil. Add tomatoes and garlic
- 1 lb chicken (cut into long strips)
- 3 tbsp olive oil
- 1 8.5oz jar sun dried tomatoes (packed in water, drained and julienned) Peg's packed in oil
- 3 cloves garlic pressed
- 1/4 cup fresh basil leaves
- 1 8.5 oz can artichoke hearts in water (drained and quartered) Peg's in oil
- 6 oz feta cheese crumbled
- 1/4 cup heavy cream (Peg adds 1/2 cup) continue adding till mixture is thin
- 1 lb angel hair pasta
- 1 tsp dried oregano
- 1/2 tsp salt (then to taste)
- 1/4 tsp pepper (then to taste)
