Waffles - Whole Grain Waffles

These crispy whole grain waffles are perfect for weekend breakfasts
- 2 cup whole wheat pastry flour
- 2 cup whole wheat flour (you can also use spelt, rye, cornmeal or buckwheat)
- 3 teaspoons baking powder
- 2 teaspoon baking soda
- 1 teaspoon salt
- 4 cups buttermilk (make your own: add 4 tablespoons of vinegar or lemon juice to 4 cups milk, and let sit for 5 minutes)
- 6 eggs
- 2 tablespoon maple syrup (or honey)
- 1/2 cup (1 stick) butter (original recipe called for 2 full stick of butter)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract

- 1 cup green split peas
- ½ cup dried baby lima beans
- ¼ cup barley
- 8 cups low-sodium vegetable stock
- 2 bay leaves
- 1 teaspoon celery seed
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, chopped
- 2 celery stalks, chopped
- 2 tablespoons parsley flakes
- 1 teaspoon basil
- 1 teaspoon paprika
- ⅛ teaspoon white pepper
- freshly ground black pepper to taste

- 3 cups whole-grain flour (I prefer spelt, though if you want to go gluten-free, this is a good opportunity to use buckwheat. Try half buckwheat and half oat.)

- 1 teaspoon ground cinnamon
- 1 teaspoon ground allspice

- ½ cup chopped red bell pepper
- 1 medium-large clove garlic
- 2 cans (14-ounces each) chickpeas, rinsed and drained
- ½ cup nutritional yeast
- 1 tablespoon tomato paste (can substitute natural ketchup)
- 1 teaspoon sea salt
- 1 teaspoon red wine vinegar
- ½ teaspoon dijon mustard
- freshly ground black pepper (optional)
- 1 teaspoon fresh thyme or rosemary leaves

- 1 1/2 cups warm water (105℉)
- 1 tbsp sugar
- 2 1/4 tsp instant dry yeast (1 package)
- 2 cups bread flour
- 1 3/4 cups whole wheat flour
- 1 tbsp cocoa powder
- 2 tsp espresso powder (or coffee)
- 1 tsp salt
- 2 tbsp butter, softened
- 1/4 cup honey
- 2 tbsp molasses
- caramel colouring, or dark brown food colouring (optional)
- 1/4 cup cornmeal, for dusting the bottom of the shaped (not baked) loafs (optional)
- oats, for dusting the top of the shaped (not baked) loafs (optional)

- 1⁄4 cup unsweetened applesauce
- 1 medium red bell pepper, seeded and finely diced
- 1 (10-ounce) package frozen corn kernels, thawed
- 1 cup cooked or canned black beans, rinsed and drained
- 6 green onions, white and light green parts thinly sliced
- Tomato Salsa (or use store-bought), for serving
- Sour “Cream" for serving
