- 2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
- 2 cloves garlic, finely chopped
- 2 cans cannellini beans, rinsed and drained
- 1 small onion, chopped
- 1 roasted red pepper, homemade, recipe follows or store bought, diced
- 2 sprigs fresh rosemary, leaves stripped and finely chopped
- 1 handful chopped flat-leaf parsley, chopped
- Coarse salt and pepper
Pumpkin Apple Muffins (12 Muffins or 24 Mini Muffins)

1. Preheat oven to 350 degrees
- 1 1/3 Cups All Purpose Flour
- 2/3 Cup Whole Wheat Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Baking Soda
- 1/2 Tsp Salt
- 1 Tsp Cinnamon
- 1 Tsp Pumpkin Spice
- 3 Tbsp Vegetable or Canola Oil
- 1/2 Cup Agave OR Honey
- 1 Egg
- 1/2 Cup Milk
- 1/2 Cup Pumpkin Puree
- 1 Medium Apple, peeled and grated (Gala, Pink Lady, Fuji or Golden Delicious are good choices)

- 1/4 cup honey
- 1/4 cup butter, melted
- 1 teaspoon gluten free Worcestershire sauce

- 1 1/2 cups low sodium chicken broth
- 1/2 cup milk
- 3 tablespoons flour
- 1 teaspoon curry powder
- 2 tablespoons dried parsley
- 1 teaspoon salt
- 1/2 teaspoon fresh ground pepper
- 2 cups cubed cooked chicken
