1. Remove the tray from the toaster oven
- 1 pita bread
- 8 teaspoons spaghetti sauce
- 2 slices cheese, provolone

Preheat the oven to 300 degrees F
- 1 (3-pound) corned beef brisket (uncooked), in brine
- 16 cups cold water
- 2 bay leaves
- 2 teaspoons black peppercorns
- 4 whole allspice berries
- 2 whole cloves
- 1/2 large head green cabbage (about 2 pounds), cut into 8 thick wedges
- 8 small new potatoes (about 1 1/4 pounds), halved

- Brown Rice and Mushroom Salad:
- 2 red bell peppers
- 2 cups reserved brown rice mixture from Brown Rice and Mushroom Salad

- 1 (15-ounce) can diced tomatoes, drained
- 1 cup chicken broth
- Kosher salt
- 2 cups brown rice
- 1/2 red onion, chopped
- 2 stalks celery, chopped

- 1 tablespoon lemon
