- 190 grams / 2 cups cake flour

- 100 grams / 1/2 cup white granulated sugar
- 60 grams / 1/2 cup Coco Powder
- 1 1/2 tsp Baking Powder
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 150 grams / 3/4 cup Butter
- 1/2 cup Milk
- 1/2 cup Sour Cream
- 4 large Eggs
- 2 tsp Vanilla extract
- 2/3 cup Boiling water
- 2 tsp Coffee
Vegan Vanilla Cake

Light fluffy and delicious vegan vanilla cake! Ideal for special occasions
- For Decoration:
- 1 and 3/4 cups (220g) All-Purpose Flour
- 1 cup (200g) Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1 cup (240ml) Soy Milk (or other non-dairy milk)
- 2 tsp (10ml) Vanilla Extract
- 1/3 cup (80ml) Olive Oil (or other vegetable oil)
- 1 Tbsp (15ml) White Vinegar (or Apple Cider Vinegar)
- For The Vanilla Frosting
- 3 and 3/4 cups (450g) Powdered Sugar
- 3 Tbsp Vegan Butter
- 4 Tbsp Soy Milk (or other non-dairy milk)
- 2 tsp Vanilla Extract
- Fresh Strawberries

Instructions Place the milk and half of the sugar in a medium saucepan (see note)
- 2 cups of whole milk
- 2/3 cup granulated sugar
- 1/4 cup flour (1 oz.)
- 1/4 cup cornstarch (1 oz.)
- 4 large egg yolks
- 2 to 3 T. unsalted butter (I used three)
- 1 teaspoon of vanilla extract
- Optional: 1 cup heavy cream, whipped
