Berry Gelatin Mold Recipe

Directions * In a large bowl, dissolve gelatin in boiling cranberry juice

- 2 packages (3 ounces each) strawberry gelatin
- 2 cups boiling cranberry juice
- 1-1/2 cups club soda, chilled
- 1 teaspoon lemon juice
- 1 cup each fresh blueberries, raspberries and sliced strawberries
- Lettuce leaves
- Additional mixed fresh berries, optional
Black Forest Icebox Cookies Recipe

Directions In a small saucepan, combine the sugar, cornstarch and salt
- Ingredients
- 3 tablespoons sugar
- 4 teaspoons cornstarch
- Pinch salt
- 3/4 cup fresh or frozen pitted tart cherries, thawed and coarsely chopped
- 3/4 cup cherry juice blend
- 1-1/2 teaspoons lemon juice
- 1 to 2 drops red food coloring, optional
- 1/2 cup Mascarpone cheese
- 1 tablespoon confectioners' sugar
- 1 teaspoon cherry brandy
- 1 package (9 ounces) chocolate wafers
- 1/2 cup semisweet chocolate chips
- 1/4 cup heavy whipping cream

Crust Mix together dry ingredients until well blended

- 3-4 TBS cold water

- CREAM CHEESE FILLING:
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 can pumpkin, 15 ounces
- 1/4 cup water
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
