Combine all the ingredients in a bowl
- 1 can black beans (14 ounces), rinsed and drained
- 2 cups frozen corn kernels
- 1 small red bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 1/2 teaspoons ground cumin (half a palmful)
- 2 teaspoons hot sauce, such as Tabasco (eyeball it)
- 1 lime, juiced
- 2 tablespoons vegetable oil or olive oil (eyeball it)
- Salt and pepper
- Preparation
- Combine all the ingredients in a bowl. Let stand for at least 15 minutes for the corn to fully defrost and the flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts – no need to refrigerate!

- 1/2 1/2 1/2 tsp onion powder
- 3/4 3/4 3/4 tsp ground sage
- 1 1 1 tsp dried parsley
- 1 1 1 tsp pepper
- 2 1/2 2 1/2 1/2 tsp salt
- 1 1 1 cup frozen peas
- 1 1/2 1 1/2 1/2 cups diced carrots, canned or frozen

- Biscuits
- 2 2 2 cups all-purpose flour
- 1 1 1 tsp salt
- 1 1 1 tbsp sugar
- 3 3 3 tsp baking powder
- 1/3 1/3 1/3 cup shortening
- 1 1 1 cup milk
- to 425, to to to spray a cookie sheet with cooking spray. Add the flour, salt, sugar and baking powder to a large bowl and whisk to combine. Cut in the shortening until crumbs form. Gently stir in the milk to combine.
