In a small bowl, combine the sugars, flour and spices; set aside
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 6 to 7 cups thinly sliced peeled tart apples
- 1 tablespoon lemon juice
- Pastry for double-crust pie (9 inches)
- 1 tablespoon butter
- 1 egg white
- Additional sugar
Black Beans and Rice

In a stockpot over medium-high heat, heat the oil
- 1 teaspoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3/4 cup uncooked white rice
- 1 1/2 cups low sodium, low fat vegetable broth
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 3 1/2 cups canned black beans, drained
Manzana Chili Verde

Place chopped potatoes in a small saucepan, cover with water, and bring to a boil
- 1 pound Yukon gold potatoes, cut into 1/2-inch pieces
- 2 tablespoons vegetable oil
- 1 large yellow onion, cut into small dice
- 3 jalepenos, seeded and sliced thinly
- 2 poblano peppers, seeded and chopped into 1-inch pieces
- 4 cloves garlic, minced
- 3 teaspoons cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/3 cup dry white wine
- 1 pound tomatillos, papery skin removed, washed, chopped into 1/2-to 3/4-inch pieces
- 2 Granny Smith apples, cored, quartered, and sliced thinly
- 2 cups vegetable broth
- 1 cup loosely packed fresh cilantro
- 1/4 cup chopped scallions, plus extra for garnish
- 1 (15-ounce) can small white beans, drained and rinsed
- Juice of 1 lime, plus extra for serving
- Avocado slices for garnish
Easy Herb Roasted Turkey

1. Preheat oven to 325
- 1 (12 pound) whole turkey
- 3/4 cup olive oil
- 2 T. garlic powder
- 2 t. dried basil
- 1 t. ground sage
- 1 t. salt
- 1/2 t. ground black pepper
- 2 cups chicken broth
Buckwheat Waffles

Instructions Whisk the wet ingredients together and add to the dry ingredients
- Dry ingredients:
- 3/4 cup buckwheat flour
- 1 cup whole wheat pastry flour or all-purpose flour
- 1 tbsp baking powder
- 1 tbsp sugar
- 1/4 tsp salt
- Whisk these together in a bowl and set aside.
- Wet ingredients:
- 1 1/2 cups soy milk
- 1 1/2 tsp egg replacer like EnerG whisked into 2 tbsp warm water
- 1/2 cup apple sauce
- 2 tbsp canola oil
Creamy Butter Frosting

Cream butter, salt, and vanilla, beating with an electric mixer until light and fluffy
- 1/3 cup butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 pound (3 1/2 cups) confectioners sugar, sifted if it has visible lumps
- 3 to 4 tablespoons milk or light cream, or to make smooth and spreadable
German Apple Cake (vegan)

Preheat the oven to 350 degrees
- Topping:
- 3 Apples peeled and cut into slices
- 1/2 cup non dairy butter
- 1/2 cup sugar
- 1/2 unsweetened applesauce
- 2 tbsp non dairy milk
- 1 1/2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1/4 cup brown sugar
- 1/2 tsp ginger
- 1/2 tsp cinnnamon
Scallops with Linguine Recipe

Cook linguine according to package directions; drain
- 2 ounces uncooked linguine
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 2 tablespoons white wine or additional chicken broth
- 1-1/2 teaspoons butter
- 1 garlic clove, minced
- 3/4 cup sliced fresh mushrooms
- 2 green onions, sliced
- 1/4 cup grated carrot
- 1/2 pound bay scallops
- 1-1/2 teaspoons minced fresh parsley
- Lemon wedges, optional
Steel Cut Oatmeal for the Crock Pot
