Heat the olive oil in a soup pot on low heat
- 2 tbsp olive oil
- 2 cups chopped onions
- 4 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1 medium eggplant, cubed
- 2 green bell peppers, seeded and chopped
- 28 oz canned diced tomatoes
- 1 cup water
- 1/4 tsp ground black pepper
- 6 oz baby spinach
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
- 1 lb orzo
- 4 oz feta, crumbled

- 2 cups all-purpose flour, unbleached
- 1 1⁄2 teaspoons baking soda
- 1 ⁄2 teaspoon salt

- 1 ⁄4 cup water

- 1 cup butter, room temperature
- 1 cup granulated sugar

- 1 cup orange juice
- 1/2 cup honey
- 3/4 - 1 cup sugar
- 2 cinnamon sticks
- Zest of one orange
- 1 slice of orange

Vegan Cuban Style Black Bean Soup

1. Place water in a soup pot over medium-high heat
- 2 tbsp. water
- 1 large yellow onion, chopped
- 3 garlic cloves, minced
- 2 red bell peppers, chopped
- 4 cans black beans, drained and rinsed
- 3 ripe and medium-size bananas, sliced
- 1 tbsp. ground cumin
- 1 tsp. ground ginger
- 1 tbsp. fresh or dried cilantro
- 1 small jalapeño, seeded and chopped
- 1-2 tbsp. tabasco
- 2 cans of light coconut milk
- 4 cups vegetable broth
- Salt, to taste

- 7 Tablespoons cocoa powder
- 4 ounces semi-sweet chocolate, chopped into 1/4 inch pieces

- 5 tablespoons unsalted butter, divided
- 3 pounds Vidalia onions (about 4 medium), halved lengthwise, peeled, and thinly sliced

- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper

- 2 bay leaves
