Ramen Soup with Vegetables

Improve on the typical ramen soup by adding your own fresh veggies and seasonings
- 1 tablespoon olive oil
- 1 medium yellow onion, diced medium
- 2 carrots, diced medium
- 1 stalk celery, diced medium
- 1/4 pound green beans, trimmed and cut into 1/2-inch pieces
- Salt and pepper
- 1 can (14.5 ounces) diced tomatoes
- 3 1/2 cups chicken broth
- 2 packages (3 ounces each) ramen, broken into quarters (seasoning packet discarded)
French Onion Soup

Melt the stick of butter in a large pot over medium heat
- 1/2 cup unsalted butter
- 4 onions, sliced
- 2 garlic cloves, chopped
- 2 bay leaves
- 2 fresh thyme sprigs
- Kosher salt and freshly ground black pepper
- 1 cup red wine, about 1/2 bottle
- 3 heaping tablespoons all-purpose flour
- 2 quarts beef broth
- 1 baguette, sliced
- 1/2 pound grated Gruyere
Vegetable Lasagna

1. Preheat oven to 375°. Heat olive in large skillet over medium heat
- 12 pasta sheets lasagna - cooked per package directions
- 6 cups marinara sauce
- 4 tbsp olive oil
- 1 clove garlic, chopped
- 1 bunch asparagus, sliced thin on bias
- 2 large zucchini, diced
- Salt and black pepper, to taste
- 1/2 cup grated parmesan cheese, divided
- Container (15 oz) of ricotta cheese
- 1 egg
- 2 cups shredded mozzarella
Surprise Meringues

Preheat oven to 300 degrees
- 2 egg whites
- 1/8 teaspoon salt
- 1/8 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 6 oz semisweet chocolate chips*
- You can substitute crushed peppermints. I use half the amount as it makes the cookies very chewy.

Step 1: In a medium bowl, sift flour, baking powder and salt
- 2 1/2 cups All purpose flour
- 1 Tablespoon plus 1 teaspoon baking powder
- 1/2 teaspoon table salt
- 2/3 cups butter, softened
- 6 oz. cream cheese, softened
- 1 1/2 cups granulated sugar
- 2 egg yolks
- 1 Tablespoon plus 1 teaspoon Vanilla extract
- 1 Tablespoon plus 1 teaspoon juice from a fresh orange
- 10 cups sweetened flaked coconut, divided in to 6 cup and 4 cup portions
- 1 bag Hershey Kisses (48 pieces)
Slow Cooker Vegetarian Pasta e Fagioli Soup with Whole Wheat Orzo

Heat olive oil (either in the Ninja Cooker or in a pan on the stove) and saute the onions until they start to softe...
- 2 T olive oil
- ■ 1 large onion, chopped
- ■ 1 cup sliced celery
- ■ 1/2 cup chopped carrots
- ■ 1 T minced garlic
- ■ 1 tsp. Italian Herb Blend ■ 2-3 tsp.
- Spike Seasoning (Or substitute any type of all-purpose seasoning blend that you like.)
- ■ 1/2 tsp. ground fennel
- ■ 1/2 tsp. red pepper flakes
- ■ 2 cans (15 oz.) red beans, rinsed and drained
- ■ 3 cans (14 oz.) vegetable broth
- ■ 8 oz. can tomato sauce
- ■ salt and fresh ground black pepper to taste
- ■ several pieces Parmesan rind (optional, but does add wonderful flavor to the soup)
- ■ 1/2 cup 100% Whole Wheat Orzo Pasta (could substitute any type of small whole wheat pasta, or use brown rice for gluten-free variation)
- ■ 2 T good quality balsamic vinegar
- ■ freshly grated Parmesan cheese for serving

In a large bowl, mix flour and salt; cut in butter until crumbly
- FILLING:
- 2-1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup cold butter, cubed
- 6 to 8 tablespoons ice water
- 1 cup sugar
- 1/4 cup cornstarch
- Dash salt
- 1/3 cup water
- 1/2 teaspoon ground cinnamon, optional
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup halved fresh strawberries
- 3/4 cup fresh blackberries
- 1 tablespoon lemon juice
- 2 tablespoons butter
