Mexican Stuffed Shells

Preheat oven to 350 degrees Brown ground beef
- Toppings:
- 1 lb lean ground beef
- 1 pkg taco seasoning
- 8 oz pkg cream cheese
- 16 jumbo shells
- 1-1/2 cups salsa
- 1 cup taco sauce
- 1 cup cheddar cheese
- 1 cup Monterey jack cheese
- Green onions - chopped
- olives - chopped
- sour cream
Cream Cheese Sugar Cookies

Blend together sugar, margarine, cream cheese, salt, almond extract, vanilla, and egg yolk with mixer
- 1 Cup sugar
- 1 cup butter, softened
- 3 oz. package of cream cheese
- 1/4 tsp salt
- 1/2 tsp Almond extract
- 1/2 tsp Vanilla extract
- 1 egg yolk (reserve white)
- 2 cups all purpose flour
Loaded Potato Chicken Casserole!

In a large bowl mix together the olive oil, salt, paprika, garlic powder and hot sauce
- 1/3 cup olive oil
- 1 tsp salt
- 1 Tbls paprika
- 2 Tbls garlic powder
- 2 Tbls hot sauce
- 6-8 red potatoes, cubed
- 1 lb boneless chicken, cubed
- cooking spray
- 2 cups shredded cheese
- 1 cup green onions, chopped
- 1 cup bacon bits
Soba Noodles with Sweet Ginger Scallion Sauce

1. Mix all the ingredients for Sweet Ginger Scallion sauce in the bowl, check for the seasoning
- For Sweet Ginger Scallion sauce:
- Soba noodles – 1 9oz packet.
- Salt and Pepper as per taste.
- Sesame seeds – 2 Tbsp lightly toasted.
- Cucumber thinly julienne optional.
- Lime wedges optional.
- Scallions – 1 1/2 cup finely chopped.
- Ginger – 2 Tbsp minced.
- Cilantro – 1/4 cup chopped.
- Sesame oil/ grape seed oil/ any neutral oil – 2-3 Tbsp.
- Chili oil – 2 tsp.
- Soy sauce – 1Tbsp.
- Rice wine vinegar – 2 Tbsp.
- Honey – 2 Tbsp.
- Salt – 1 tsp, as soy sauce is salty too so be careful with the salt.
- Black pepper – 1 tsp
VELVEETA® Easy Chicken Primavera

- 1 pound boneless, skinless chicken breasts, cut in bite-size pieces
- 3 cups water
- 1 (12 ounce) package tri-color rotini pasta, uncooked
- 2 cups broccoli florets
- 1/2 pound VELVEETA®, cut into 1/2-inch cubes
- 1 teaspoon dried basil leaves
- 1 teaspoon black pepper
- 2 small tomatoes, coarsely chopped
Lemon Bisque

Chill evaporated milk. Mix jello, water, lemon juice, lemon rind and salt
- Crust:
- 1 pkg lemon jello
- 1 1/2 cup hot water
- 4 tsp lemon juice
- 1/3 cup sugar
- 1 can evaporated milk

- 2 cups crushed graham crackers
- 1/4 cup brown sugar

- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground cayenne pepper
- 6 chicken breast tenderloins
- 1 egg
- 1 tablespoon half-and-half
- 1 cup seasoned bread crumbs
- 1/2 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 tablespoon minced fresh flat-leaf parsley
- 2 tablespoons olive oil
- 3 quarts water
- 1 tablespoon salt
- 6 ounces angel hair pasta
- 1 1/2 cups prepared marinara sauce, divided
- 3 ounces shredded Italian cheese blend

- 4 bone-in pork chops (3/4 – 1-inch thick, around 1/2 pound each)
- Kosher salt, to taste
- Ground black pepper, to taste
- Brown sugar, to taste (optional)
- 2 Tablespoons butter, divided
- 1 large onion, sliced (about 2 1/2 – 3 cups)
- 1 teaspoon dried thyme or rosemary (or 1 Tablespoon chopped fresh thyme or rosemary)
- 1 cup chicken broth or stock
- 1/4 cup apple cider (no added sugar)
- 3 Tablespoons low sodium soy sauce
- 1 Tablespoon Worcestershire sauce
- 2 – 3 Tablespoons cornstarch mixed with 2 Tablespoons water
