In Dutch oven, heat oil over medium- high heat
- 2 tbsp vegetable oil
- 3 lb (1.4 kg) boneless pork shoulder
- 1-1/2 tsp salt
- 3 onions, chopped
- 4 cloves garlic, minced
- 1-1/2 cups bottled strained tomatoes, (passata)
- 1 cup water
- 1/3 cup cider vinegar
- 1/4 cup chili powder
- 1/4 cup fancy molasses
- 2 tbsp packed dark brown sugar
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp pepper
- 1 oz (28 g) unsweetened chocolate, chopped
Mediterranean Chicken and Spinach Pasta

- 1 lb (450g) boneless, skinless chicken breast, thinly sliced
- 1/4 tsp each salt and pepper
