Spaghetti and Meatball Casserole

Preheat oven to 400 F. Lightly mist an 11-cup (2
- 1/2 lb (8 oz) whole wheat spaghetti noodles
- 2 cloves garlic
- 1 cup fresh basil leaves
- 2 tbsp olive oil
- 1/2 cup Parmigiano-Reggiano cheese, finely grated
- 1/3 cup low-fat cottage cheese
- 6 oz extra-lean ground beef
- 1 tbsp wheat germ
- 1 tbsp skim milk
- 1/4 cup finely diced red onion
- 2 1/2 cups strained tomatoes (passata)
- 1 bay leaf
Spicy Turkey and Asparagus Lettuce Wraps

Stir sauce ingredients together and reserve
- 1.5 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tbsp finely chopped ginger
- 1 lb ground turkey or chicken
- 1/2 small cooking onion, finely chopped
- 2 ribs of celery, finely chopped
- 1/2 sweet red pepper, cut into 1/4-inch dice
- 1/2 lb thin asparagus, trimmed and cut into 1/2-inch pieces
- 1 tbsp light soy sauce
- 1 tsp Asian chili sauce
- 1 tsp cornstarch
- 2 tbsp cold water
- 2 tsp dark sesame oil
- 1/4 cup chopped fresh cilantro
- 2 tbsp chopped fresh mint
- 2 green onions, finely chopped
- 1-2 heads Boston lettuce, separated into small cups
- Orange Hoisin Sauce
- 3 tbsp hoisin sauce
- 2 tbsp orange juice
- 1 tsp grated orange peel
- 1 tsp sesame oil
- 1/2 tsp Asian chili sauce

- 1 bone-in chicken breast (about 11/2 pounds), halved
- 2 medium carrots, sliced diagonally into 2-inch pieces
