Mary Clare's Kickin' Chicken'

First, preheat your oven to 350 degrees
- 8 boneless, skinless chicken thighs
- 2 teaspoons Kosher or sea salt
- 2 teaspoons coarse-ground black pepper
- 2 tablespoons Frank Davis Poultry Seasoning
- ¼ cup extra virgin olive oil
- 1-1/2 cups prepared mirepoix*
- 1 cup white or Crimini mushrooms, sliced
- 1 can cream of chicken soup
- 1 cup semi-dry white wine**
- 2 tablespoons Kitchen Bouquet
- 2 large carrots, stripped
- 12 B-size creamer red potatoes
- 2 cups canned whole green beans, washed and drained
- 2 cups cooked instant rice or dirty rice mix
- ½ cup minced Italian flat leaf parsley for garnish
- 8 hot, buttered French pistolettes

One thing I've come to love about Indian cooking is the masterly way they cook vegetables
- 1 pound spinach
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece ginger, peeled and minced
- 1 1/2 pounds firm potatoes, scrubbed and cut into chunks
- 1 fresh red chili, de-seeded and minced, or 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 cup water
Herb & Onion Frittata

This Italian-style omelet is delicious with just about any herb combination; try parsley, dill, chervil or marjoram
- 1 cup diced onion
- 1/4 cup plus 1 tablespoon water, divided
- 1 teaspoon extra-virgin olive oil
- 1/2 cup liquid egg substitute, such as Egg Beaters
- 2 teaspoons chopped fresh herbs, or 1/2 teaspoon dried
- 1/8 teaspoon salt
- 1/8 teaspoon freshly ground pepper
- 2 tablespoons farmer's cheese, or reduced-fat ricotta

James Beard Sweet Potato Rolls

In a bowl combine yeast with 1 tablespoon of sugar and warm water, let proof for 5 minutes
- 2 packages of yeast (1/4-ounce packages)
- 1/4 cup sugar
- 1/2 cup water (110 to 115 degrees)
- 3 tablespoons melted butter
- 1 tablespoon salt
- 3 eggs, one of which is beaten together with 2 tablespoons heavy cream
- 3 to 3 1/2 cups flour
- 1/2 cup cooked mashed sweet potatoes

- 2 tablespoons regular raisins
- 1 large lemon
- 3 tablespoons extra virgin olive oil
- 1/4 teaspoon cround coriander
- 1/4 teaspoon ground cumin
- 1/4 teaspoon sweet paprika
- 1 firm but ripe avocado, diced
- 2 scallions, white and light green parts only, thinly sliced
- 3 tablespoons slivered almonds, toasted
- Kosher salt and freshly ground black pepper.
The Whole Enchilada Chicken Soup
