Blue Cheese Portobello Mushroom Burgers

1 Preheat your broiler. Line a small baking sheet with aluminum foil
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon extra virgin olive oil
- Kosher salt
- Freshly ground black pepper
- 2 medium portobello mushroom caps, wiped free of dirt
- 1/3 cup blue cheese crumbles
- 2 whole wheat hamburger buns or rolls, cut in half
- A few leaves lettuce (optional)
- A slice or two of onion (optional)
- A few dabs Dijon mustard (optional)

What a delicious alternative to spaghetti
- 1 - (3 lb) spaghetti squash (approx.)
- 1 1/2 1½ cups onions, chopped
- 1 1/2 1½ tablespoons extra virgin olive oil
- 5 medium tomatoes, chopped
- 3 medium zucchini, sliced into ¼- inch pieces
- 1/4 ¼ cup fresh snipped basil
- 2 cloves garlic, minced
- 3/4 ¾ teaspoon salt
- 1/4 ¼ teaspoon fresh ground pepper
- 1/4 ¼ cup grated Parmesan cheese, optional

A tasty bean salad that's great for a barbecue
- 1 dash pepper, to taste
- 1 dash salt, to taste
- 2 tbsps vinegar
- 1/4 cup canola oil
- 1/4 cup cilantro, chopped
- 1 cup corn kernels
- 1 clove garlic, crushed
- 1/2 cup chopped green onions
- 20 g sunflower seeds
- 1 cup black beans, drained
- 1 cup canned kidney beans, drained
- 1 tbsp honey
- 1/2 cup cooked pearl barley
- 1/2 cup cooked brown rice

- 1 pound boiling potatoes, peeled and diced (about 2 cups)
- Kosher salt
- 3 large red ripe tomatoes, about 1 1/4 pounds, peeled and coarsely chopped
- 1 medium onion, coarsely chopped (about 1 cup)
- 2 cloves garlic, coarsely chopped
- 1 canned chipotle in adobo sauce, coarsely chopped
- 2 cups vegetable stock
- 1/3 cup cilantro, finely chopped
- Note: To remove skins from tomatoes, wash and drop them into boiling water with potatoes for 30 seconds each and remove with a slotted spoon. Rinse with cold water, pierce skin with a knife. The tomato skin will peel right off.
Roasted Cauliflower with Parmesan

For a few years now I've been completely infatuated with roasted vegetables
- (Makes 2-4 servings, depending on the size of the head of cauliflower and what else you're serving it with; recipe created by Kalyn and inspired by many roasted vegetable recipes through the years.)
- 1 head cauliflower, core cut away and cut into bite-sized flowerets
- 1-2 T olive oil (enough to coat all the cauliflower)
- salt and fresh-ground black pepper to taste
- 2-3 T freshly grated Parmesan cheese (depending on the size of your head of cauliflower; I used coarsely grated cheese)
