Pumpkin Wafers Dog Treats

Preheat oven to 300 F. Mix all ingredients together
- One 15 oz. can mashed pure pumpkin (NOT the spiced pie filling)
- 3/4 cup cream of wheat (or rice cereal if wheat-sensitive) You can mix this dry--no need to cook it first
- 1/2 cup dry powdered milk

In a bowl, combine buttermilk, mayonnaise, half of the blue cheese, lemon juice, and hot sauce
- " 2/3 cup buttermilk, well-shaken
- " 1/3 cup mayonnaise
- " 4 ounces Danish blue cheese (about 1 cup)
- " 1 tablespoon lemon juice
- " A few dashes hot sauce, such as tobasco
- " 2 tablespoons chopped chives
- " salt and pepper, to taste

- To serve:
- 10 medium sized potatoes, peeled and chopped into small and large pieces
- 2 tablespoons oil
- 1 white onion, diced
- 2 garlic cloves, minced
- 2 tsp cumin
- 1 tsp achiote powder
- 7 cups of water
- 1 cup of milk or more
- 1 cup grated or crumbled cheese (quesillo, queso fresco, mozzarella or monterey jack)
- 1 bunch of cilantro, leaves only, minced
- Salt to taste
- 1 cup of queso fresco, feta cheese, or grated mozzarella
- Maiz tostado or cancha corn nuts
- Chopped cilantro and green onions
- Avocados, sliced or diced
- Ecuadorian aji hot sauce
Coffee Cake, Unbelievably Delicious

Preheat oven to 350. Combine first 6 ingredients till crumbs are formed
- 2 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 cup brown sugar
- 1/8 teaspoon nutmeg
- 1 teaspoon cinnamon
- 3/4 cup vegetable oil
- 2/3 cup crushed pecans
- 1 egg
- 1/2 teaspoon salt
- 2 teaspoons soda
- 1 cup buttermilk (may substitute 1 tablespoon lemon juice or vinegar plus milk to make 1 cup. Let stand 5 minutes before adding to batter).
Sopa de Albondigas (Meatball Soup)

Mix meat, eggs, onions and seasonings together
- 1 1/2# ground beef
- 2 eggs
- 2 onions (peeled, minced fine)
- 1/8 tsp marjoram
- 1 tsp salt
- 1/4 tsp pepper
- 2 quarts beef broth
- Optional: Fresh chopped cilantro.
- Can also finely chopped carrots, celery, corn, or other vegetables if desired.
Olive Tapenade and Goat Cheese Crostini

- 4 ounces mache, roots trimmed
- 8 ounces assorted baby lettuces, such as oak, Lolla Rossa, and bibb

- 1 large pink grapefruit
- 1 small avocado, peeled, pitted, and cut into 1/2-inch cubes
- 1 red small papaya, peeled and cut in half
