Baked Citrus Tuna

Prepare grill. Combine first 5 ingredients in a medium saucepan
- 1 cup fresh orange juice (about 3 oranges)
- 1/2 cup fresh lemon juice (about 3 lemons)
- 1/2 cup fresh lime juice (about 4 limes)
- 3 tablespoons sugar
- 4 garlic cloves, minced
- 1 tablespoon freshly ground black pepper 1 teaspoon salt
- 1 teaspoon fennel seeds, crushed
- 6 (6-ounce) tuna steaks (about 3/4 inch thick) Cooking spray

Preheat oven to 375 F. Separate dough into 8 triangles
- 1 can refrigerated crescent rolls
- 4 hot dogs
- ketchup
- mustard
Sweet and Sour Chicken Chunks

Sprinkle the chicken with salt and pepper
- 1 pound boneless, skinless chicken breast, cut into 1-1/2" pieces
- teaspoon salt
- ½ teaspoon pepper
- ¼ cup butter
- ½ cup plum jam
- 2 teaspoons mustard
- 2 teaspoons horseradish
- 1 teaspoon lemon juice
- 1/8 teaspoon ground mace (optional)

Fruit Cocktail Cake

- 1 Cup flour
- 1 Cup sugar
- 1 tsp soda
- 1 egg beaten
- 2 tsp melted butter
- pinch salt
- 1 small can fruit cocktail UNdrained (#3 size)
- For topping
- Brown sugar
- Chopped nuts
Chinese Pork Stew

Use a sharp knife to cut between the spareribs
- 1 lb. pork spareribs, cut in half
- 3 Tbs. sugar
- 6-8 green onions, 4-5 inches long
- 1/4 C. soy sauce
- 1 Tbs. rice wine or dry sherry
- 5 Tbs. water
- 2 Tbs. rice vinegar or white vinegar
Pork Roast

Mix above in crock pot and look on low for 10 hours, turning every 3 hours
- 4 - 5 Lb. Pork loin roast
- ½ to ¾ cup wine
- 1/2 to 3/4 cup soy sauce (equal parts soy sauce and wine)
- 1/2 to 1 teaspoon ground ginger
- 1 to 2 cloves crushed garlic

- 2 6oz sea bass fillets
- 1/4 cup butter
- 1/4 cup fresh chopped parsley,
- 2 tablespoons chopped dill weed,
- 1 tablespoon dried dill weed
- 2/3 cup finely chopped onions
- 1/4 cup chopped fresh chives
- 2 cloves of garlic chopped
- 1 tablespoon fresh lemon juice
- salt & pepper to taste
Reuben Casserole

Slice 3/4 of the loaf into 1/2 inch slices and toast at 400 degrees for 5-7 minutes
- 1 large un-sliced loaf of dark rye bread
- 2 pounds of Wisconsin baby Swiss cheese
- 1 quart of home made sauerkraut or
- 1 large bag of Franks Kraut with 1/2 cup brown sugar
- 2 cups regular Thousand Island dressing
- 1 pounds of thin sliced corned beef
- 1/2 teaspoon Penzy's dry mustard
Mixed Berry Soup with Gelato

- 2 cups dry red wine
- 1 cup water
- 2/3 cup sugar
- 2 whole star anise
- 2 cinnamon sticks
- 1 (12-ounce) basket fresh strawberries, hulled, sliced
- 1 (6-ounce) basket fresh raspberries
- 1 (4.4-ounce) basket fresh blueberries
- 1 pint vanilla bean gelato or ice cream
