Avocado Dip

- 1 avocado, mashed
- 1 cup sour cream
- 2 Tablespoons chiles
- 2 teaspoons lemon juice 1/2 tsp garlic salt
- 6 slices bacon cooked, crumbled.
Hash Brown Quiche

Preheat oven to 425 degrees F (220 degrees C)
- 3 cups shredded hash brown potatoes
- 1/3 cup butter, melted
- seasoning salt to taste
- 1 cup diced cooked ham
- 1/4 cup chopped onion
- 1 cup shredded Cheddar cheese
- 2 eggs
- 1/2 cup milk
- salt and pepper to taste
(Another) Basic Meatloaf

Preparation: Mix all ingredients together gently
- 1 pound lean ground beef
- 2/3 cup milk
- 1/2 cup cracker crumbs
- 1/4 cup ketchup
- 1/2 cup finely chopped onion
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 egg, beaten

Pork Tenderloin with Fresh Mango Salsa

Cut each tenderloin crosswise into 8 pieces
- 2 (1-pound) pork tenderloins, trimmed
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 cups diced peeled mango (about 2 large)
- 1 teaspoon grated orange rind
- 3 tablespoons diagonally sliced green onions
- 2 teaspoons grated peeled fresh ginger
- 3 tablespoons fresh orange juice
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cardamom
- 1 tablespoon olive oil
Broiled Black Pepper Sirloin Steak

Preheat oven to broil. Place 12-inch cast-iron skillet under broiler for 2 minutes
- Extra-virgin olive oil
- 1 1/2 pound boneless sirloin steak
- Coarse salt
- 1 teaspoon ground black pepper
- 1 onion, cut in half and sliced
- 1 tablespoon unsalted butter
- 1/3 cup red wine vinegar
Peppered Salmon

In a 1- to 1 1/2-quart pan, bring 1 1/2 cups water, sugar, salt, ginger, bay leaves, and allspice to a boil
- 1 cup firmly packed brown sugar
- 6 Tbsp. salt
- 1 Tbsp. minced fresh ginger
- 2 or 3 dried bay leaves
- 1 tsp. crushed whole allspice
- 1 salmon fillet with skin (2 1/2 to 3 lb.; 1 to 1 1/2 in. thick)
- About 1/3 cup mixed whole peppercorns (pink, green, white, and black)
- About 1/2 cup apple or hickory wood chips
- 1 Tbsp. honey
- 2 or 3 thin red onion slices

- 1 large can tomatoes
- 1 small can chopped green chili
- 3-4 (or about l/2) chopped green or sweet onion
- 1//3-1/2 chopped bell papper

- 3 eggs
- 3 tsp baking powder
- 1/2 tsp cinnamon
- 3/4 cup chopped nuts
- 1 cup sugar
- 2 cups flour
- 1/2 tsp salt
- 1 1/2 cups mincemeat
Enchilada, ala Diane

This is Diane's recipe from early on in her marriage
- Heat til near boiling the fo0llowing:
- Grate 1 1/2 bars longhorn cheese
- 1 can cream chicken soup
- 1/4 can water
- 1 small can diced green chiles
- (you can also add chopped leftover chicken if you want)
- Chopped green onions
- 1 pint sour cream.
