- For lemon curd
- 3/4 stick (6 tablespoons) unsalted butter
- 1 tablespoon finely grated fresh lemon zest
- 1/2 cup fresh lemon juice

- 4 Slices Pancetta Bacon
- 2 Lettuce Pieces
- 4 Slices of Tomato
- 2 Provolone Cheese Slices (can use any cheese)
- 4 Pieces Whole Wheat Bread
- Cook Pancetta in a sauté pan with no oil until crispy. Pat off extra oil on a plate with paper towels. Assemble sandwich. Side: Homemade Ranch

Baked Sea Bass in Parchment

Position a rack in the middle of an oven and preheat to 425 degrees F
- extra virgin olive oil
- 2 to 3 cloves garlic, thinly sliced
- 2 - 4 very small fresh rosemary sprigs, plus extra sprigs for garnish
- 1 1/2 to 2 lb. sea bass fillet, in one piece, skin removed
- salt and freshly ground pepper
- 2 tbsp capers, rinsed and drained
- chopped fresh Italian parsley for garnish

Santa Maria Barbecue Seasoning

This was a recipe mom used to make
- 1 - 1# box Morton's salt
- 1# Lawry's Garlic Salt
- 1# Lawry's Onion salt
- 1 medium size can black pepper
- 1/4" - 1/2" of a bottled jar celery salt.
- Optional: 2 oz each basil, marjoram, tarragon

Preheat oven to 350 degrees Combine all ingredients, spread on cookie sheet
- 1/4 cup corn or safflower oil
- 1/3 cup honey
- 2 cups uncooked oats
- 1/4 cup wheat germ
- 1/4 cup sesame seeds
- 1 pkg shredded coconut
- 1/4 cup chopped nuts
- 1/2 cup raisins
- 1/2 cup chopped dates
Arroz con Pollo the Incan Way

Set oven at 375. Start by cutting all your produce and setting them aside
- 1 whole Chicken cut up or 8 thighs
- 2 cups Inca Quinoa or brown rice
- 3 1/2 cups Vegetable or Chicken Broth
- 3 Carrots Coined
- 3 Celery, 1/4-inch cut
- 3 Bell Peppers, 1/4-inch cut (medley)
- 1 Onion diced
- 1 Tbsp Garlic
- 1 Tbsp Cumin
- 2 Tsp Turmeric
- Salt & Pepper to taste
- Garnish with Scallion
- Serve with Sprouted Corn Tortillas & Salsa
- Instructions
- Set oven at 375.
- Start by cutting all your produce and setting them aside. In a separate bowl season chicken with salt and pepper and mix well.
- In a deep-dish pan add quinoa, broth, salt, pepper, cumin and turmeric and mix. Keep in mind that the quinoa will take on the flavor of your broth, so taste to see if it needs additional seasoning..
- Add the vegetables and mix and then place chicken on top of broth. .
- Cover chicken and place in middle rack and bake for 45 minutes.
- Remove cover and continue to bake for a half hour or until quinoa has absorbed broth.
- Garnish with green scallion and serve immediately with sprouted corn tortillas and salsa.
