Basil Stuffed Beef

Add smoky flavor by grilling the meat over indirect coals
- 1 3- to 3-1/2-pound boneless beef sirloin roast, cut 1-3/4 inches thick
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups lightly packed basil leaves, snipped
- 8 to 10 cloves garlic, minced (2 tablespoons)
- 2 teaspoons olive oil
Pulled Pork, Crockpot

Pour water and some BBQ sauce into slow cooker, stir well
- 6 boneless center cut chops
- 1/2 cup water
- Spices, your favorite, e.g., a southwestern spice mix and fresh ground black pepper. Sprinkle on the chops before putting them in the slow cooker
- Sliced onions
- Half bottle BBQ sauce of choice. I like Masterpiece
Chicken Tortilla Casserole

1 Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 can (10 3/4 oz) 98% fat free 45% less sodium condensed cream of chicken soup
- 1 can (4.5 oz) chopped green chiles
- 1 container (8 oz) fat-free sour cream
- 1/2 cup fat-free (skim) milk
- 2 1/2 cups shredded cooked chicken breast
- 8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
- 1 medium green bell pepper, chopped (1 cup)
- 1 large tomato, chopped (1 cup)
- 1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)
P. F. Chang's Chicken Lettuce Wraps

Make the special sauce by dissolving the sugar in water in a small bowl
- 3 tablespoons oil
- 2 boneless skinless chicken breasts
- 1 cup water chestnut
- 2/3 cup mushroom
- 3 tablespoons chopped onions
- 1 teaspoon minced garlic
- 4 -5 leaves iceberg lettuce
- Special Sauce
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
- 1/8 teaspoon sesame oil
- 1 tablespoon hot mustard
- 2 teaspoons water
- 1 -2 teaspoon garlic and red chile paste
- Stir Fry Sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon rice wine vinegar

Spiced Wine Punch

Combine spices, sugar and water
- 24 whole cloves
- 24 whole allspice
- 1-2 cinnamon sticks
- 1 medium sized ginger root
- 1 cup sugar
- 2 cups water
- 1-6 oz can frozen lemonade concentrate, undiluted
- 1 – 48 oz Can undiluted pineapple juice, chilled
- 2 large bottles California Burgundy or other red dinner wine, chilled
- 1 large bottle sparkling water, chilled
Irish Cream

Mix these ingredients, then add 1 cup Eagle Brand condensed milk 1 pint whipping cream 1 1/2 cup good whiskey
- 1 Tbsp Brim (or other) instant coffee
- 3 Tbsp chocolate syrup
- 3 eggs

- 1/4-1/3 cup powdered sugar
- 1 Cup Flour

- 1 Cup sugar
- 2 whole eggs

Mint Chocolate Chip Cookies

When I made this recipe, I couldn't find the creme de menthe chips, so substituted just regular mint chips
- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
- 1/2 cup butter or margarine, softened
- 1/4 to 1/2 teaspoon mint extract
- 6 to 8 drops green food color
- 1 egg
- 1 cup creme de menthe baking chips
- 1 cup semisweet chocolate chunks
Olive Garden Tomato Crostini
