Chicken and Vegetable Stir Fry

Remove bones from chicken breasts, cut chicken into 11/z-inch chunks
- Whple large thicken breasts (about 2 1/2 pounds)
- I tablespoon cornstarch
- 3 tablespoons soy sauce
- 2 tablespoons dry sherry
- I teaspoon sugar
- 1 teaspoon ground ginger
- 1/4 to 1/2 teaspoon crushed red pepper
- SaIt
- 3 medIum zucchini
- 6-ounce package frozen (or fresh) Chinese pea pods
- 1 pound small mushrooms
- 1/2 cup salad oil
Light and Creamy Pumpkin Pie

Combine pumpkin, milk, pie filling and pumpkin pie spice in small bowl
- 1 c. canned pumpkin
- 1/2 c. cold milk
- 1 pkg. sugar-free vanilla instant pie filling
- 1 tsp. pumpkin pie spice
- 3 1/2 c. prepared whipped topping
- 1 graham cracker pie crust
Tuna Burger or Loaf

In a large bowl, combine the tuna, bread crumbs, and egg, and stir lightly
- 2 (6-ounce) cans solid white tuna, drained
- 1/2 cup breadcrumbs
- 2 large eggs, lightly beaten
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1 tablespoon chopped pimento, optional
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons prepared horseradish
- 1 clove garlic, minced
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- Preheat the oven to 350 degrees F.
Lemon Snow Pie

- 1/2 c. granulated sugar
- 2 Tbsp flour
- 1 env. unflavored gelatin
- 1/2 tsp salt
- 1 3/4 cup milk
- 2 Tbspns. lemon juice
- 2 tsps. grated lemon
- 3 egg whites
- 1/4 Tsp. cream tartar
Golda's Chicken Soup

This is the well-known and now universal soup of the "Yiddishe mama" as it was served in east European Jewish homes
- 1 soup chicken
- 2 cubes chicken bouillon
- 3 1/2 quarts water
- 2 onions
- 2 sprigs dill
- 1 tbs. salt
- 2 carrots
- 3 celery stalks
- 1 parsley root
- 3 sprigs parsley
- 1 tsp. lemon pepper salt

This is a "blend" of sugar cookies and coffee cake struesel topping
- crumb topping:
- 1 sugar cookie mix
- (1 egg)
- (1/4 cup softened unsalted butter)
- 1/4 cup sour cream
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 teaspoon ground cinnamon
- 4 tablespoons softened unsalted butter
- brown sugar glaze:
- 1/2 cup brown sugar
- 1/2 teaspoon vanilla
- 2 teaspoons water
Coq au Vin

Combine the flour, salt and pepper on a large plate
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper 4 chicken breasts, skinless, cut into halves 4 chicken thighs, skinless
- 1 teaspoon olive oil
- 1 cup pearl onions, peeled
- 1 slice smoked ham 99% fat-free, 1/4" thick, cut into 1/4" cubes
- 1/4 pound small fresh button mushrooms (quartered, if they are bigger than 1/2" in diam
- 1 tablespoon fresh garlic, chopped
- 1 tablespoon fresh thyme leaves, chopped 1/2 cup brandy
- 2 cups dry red wine
- 1/2 cup chicken stock
- 2 tablespoons tomato paste
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped
