Chilean Sea Bass with Spicy Fruit Salsa

Wearing rubber gloves, remove jalapeno seeds and membrane and discard
- Spicy Fruit Salsa:
- 1 teaspoon chopped jalapeno or other hot pepper
- 1 small red onion, finely chopped
- 1 papaya, peeled, seeded and chopped
- 1 ripe mango, peeled, pitted and diced
- 1/2 cup fresh pineapple, peeled and chopped
- 1/2 lemon, juiced
- 1/2 lime, juiced
- 1 tablespoon honey
- 1/2 teaspoon chili powder
- 1 tablespoon chopped cilantro
- 1/4 cup olive oil or vegetable oil
- Pinch salt and pepper
- Spicy Paste:
- 1/4 cup olive oil
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1/2 tablespoon curry powder
- 1/4 teaspoon turmeric
- 1/4 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon anise seed
- 1/2 teaspoon mustard seed, toasted in a dry saute pan for 1 minute
- Sea Bass:
- 4 Chilean sea bass fillets, or whitefish of your choice
- Salt and pepper
- 1/4 cup flour, for coating
- Vegetable or canola oil, for saute
Yucatan Lime Soup

Season chicken with the cumin and 1/4 teaspoon salt and set aside
- 1 chicken breast half, cut into 1-inch cubes
- 1 teaspoon ground cumin
- 1/4 teaspoon salt, plus 1/4 teaspoon
- 1/2 cup vegetable oil, plus more if needed
- 8 corn tortillas, cut into 1-inch strips
- 3/4 cup finely chopped white onions
- 1 teaspoon Essence, recipe follows
- 1 teaspoon minced garlic
- 1/2 cup seeded, chopped tomatoes
- 1 tablespoon minced Serrano chiles
- 4 cups chicken stock
- 3 tablespoons fresh lime juice
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into thin slices, for decoration
- 1 avocado, seeded and diced, for topping

- 1 cup sugar
- 1 cup corn syrup
- 1 cup peanut butter
- 4 cups Rice Krispies
- Optional: 2 bags Chorolate bits and 1 of butterscotch.
Bing Cherry Salad

- 1 pkg orange Jello
- 1 cup boiling water
- 1 cup grape juice
- 1 can bing cherries, pitted
- 1 cup nuts
- 1/2 pint whipping cream
- 1 large pkg cream cheese
Jam Thumbprint Cookies

- 3/4 pound (3 sticks) unsalted butter, at room temperature
- 1 cup sugar
- 1 teaspoon pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1/4 teaspoon kosher salt
- 1 egg beaten with 1 tablespoon water, for egg wash
- Crushed hazelnuts, pecans, or other nuts
- 7 ounces sweetened flaked coconut (this is what original recipe called for)
Pork Tenderloin with Peach and Pecan Sauce

- 1 pork tenderloin (about 1#), cut into 3/4-inch-thick slices
- 2 cloves garlic, minced
- 2 green onions, sliced (about 1/4 cup)
- 1 can (10 3/4 ounces) Campbell's Golden Mushroom Soup
- 1 can (15 ounces) sliced peaches in juice, drained,
- reserve juice
- 3 Tbs. low-sodium soy sauce
- 2 Tbs. honey
- 1/4 C. pecan halves, toasted and broken into large pieces
- hot cooked rice
