Chicken Rice Soup - 3 in 1

The base for each of these three soups is 2 cans of canned condensed Chicken Rice Soup
- First choice:
- 2 cans Chicken with Rice Soup; then one of these choices
- peas and carrots
- 1 1/2 cups cooked chicken
- 2 Tbsp parsley or dill
- Second choice:
- 8 oz Raw Shrimp cleaned and split lengthwise
- 2 Tbsp lemon juice
- 1/4 tsp chili oil or hot pepper sauce
- 1/4 c. chopped fresh cilantro
- Third choice:
- 1 - 15 oz can black beans
- 1 cup canned crushed tomatoes
- 4 oz can chopped green chilis
- 1/2 tsp cumin
- Tortilla Chips
Apple Crunch Mini Pupcakes

Preheat oven to 350 degrees
- 1 tbl. Baking powder
- 1/2 tsp. vanilla
- 4 tbl honey
- 4 cups flour
- 2 3/4 2 ¾ cups water
- 1/4 ¼ c. unsweetened applesauce
- 1 egg, slightly beaten
- 1 c. dried or fresh apple
- Optional: Add 2 tablespoons of ground flaxseeds for a healthy boost of Omega 3's
Cherry Slush

Pour into 9"x13" pan. Freeze overnight
- Combine above. Add:
- 7 c. boiling water
- 1 c. sugar
- 2 tea bags
- Steep 3 to 5 minutes. Remove tea bags; cool. Add:
- 2 c. cherry flavored vodka
- 1 (12 oz.) can frozen orange juice (concentrate)
Whoopie Pies

- 6 Tablespoons vegetable shortening
- 1 cup sugar
- 1 egg
- 2 cups sifted all purpose flour
- Cup unsweetened cocoa powder
- 1/2 teaspoon salt
- Cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon baking soda dissolved in cup hot water
- Cream Filling: CHECK shortening
- 3/4 ¾ cup vegetable shortening
- 2 - to 3 cups sifted box confectioners sugar
- 1 egg white
