cookie - LEMON ALMOND BUTTER COOKIES

1. Make the almond butter
- 8 oz. homemade almond butter (or organic almond butter from the store)
- 1/4 cup coconut flour
- 1/4 cup brown sugar
- juice and zest of 1 lemon
- 1 egg
- 1 tsp. vanilla bean paste
- 1 tsp. baking soda
bites - Coconut Apricot Energy Bites

In a food processor, combine all the ingredients and chop them until a paste is formed
- 1 cup dried apricots (I use unsulfured apricots from Trader Joe’s)
- 3/4 cup Medjool dates
- 3/4 cup almonds
- 3/4 cup unsweetened shredded coconut
Sour Cream and Cheddar Mashed Cauliflower

- 1 large head cauliflower
- 3 cloves garlic
- 1/3 cup full fat sour cream
- 4 oz sharp aged Cheddar cheese, grated, plus a few tablespoons for garnish
- Salt and pepper to taste

Boil the potatoes and mash them
- 1 Lb Flour
- 1 Lb Potatoes
- 3.5 Oz Vegetable oil
- 3 Eggs
- 1/4 Oz Yeast
- Granulated sugar
Taco Seasoning - homemade

Combine all ingredients until fully mixed
- 2 tablespoons of chili powder
- 1 tablespoon of Adobo seasoning
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of garlic powder
- 1/4 teaspoon of cayenne pepper
- 1/4 teaspoon of crushed red pepper
- 1/2 teaspoon of dried oregano
- 2 tablespoons of ground cumin
- 1/2 teaspoon of smoked paprika
- 2 teaspoons of Kosher salt
- 2 teaspoons of freshly ground black pepper
dressing - citrus shallot salad dressing

Whisk together the lemon juice, orange juice, oil, mustard and agave syrup in a bowl
- juice of 2 lemons
- juice of 2 oranges
- 1/3 cup olive oil
- 3 Tablespoons mustard
- 1-2 Tablespoons agave syrup or honey (depending on how sweet you like it)
- 2 shallots, finely minced
- salt and pepper, to taste

Using a mixer, mix together the flour, egg, and salt
- 1 cup GFC Cup4Cup Style Flour Blend (plus extra for rolling)
- 1 egg
- 1/4 tsp salt
- 4 Tbsp water (plus extra as needed)

1. Preheat the oven to 350 degrees F
- 1 stick unsalted butter
- 1 1/4 cups granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 medium apples, peeled and shredded, about 1 cup
- 1/4 teaspoon baking soda
- 1 1/2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt

- 2 tablespoons unsalted butter (bacon fat will work too, just reduce the salt slightly)
- 2 tablespoons extra virgin olive oil
- 2 cups carrots, peeled and diced
- 2 cups beets, peeled and diced

- 5 garlic cloves, minced
- 3 pieces of bacon, chopped
- 2 1/2 teaspoons sea salt

- 3/4 cup dry red wine
- 1 cup chicken stock
- 2 bay leaves
- 1 tablespoon fresh basil, chopped
- 1 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon apple cider vinegar
- 1 pound ground beef, veal, or pork (I used grassfed 85/15 beef)
