bar - Quinoa Coconut Granola Bars

Preheat oven to 350 degrees F
- 1 cup uncooked quinoa
- 1 cup oats
- 1/2 cups coconut
- 1 cup combination of nuts and dried fruit (I used just pecans in the pictures above)
- 1/4 tsp salt
- 1/2 cup peanut butter
- 3/4 cup honey
- 1 TBL oil
- 3 TBL Brown Sugar
squares - Baked Apple Cinnamon Quinoa Squares

Preheat oven to 375F. Coat a 8 x 12 baking dish with cooking spray (or brush with olive oil) and set aside
- 1/3 cup flaxseed meal
- 1 cup almond pulp (leftover from milk)
- 3 cups cooked quinoa
- 1 cup unsweetened applesauce (I used home made)
- 3/4 cups (6) egg whites
- 1 apple, diced (you can leave the peel on)
- 1/2 cup raisins (I used Sultana)
- 1/2 cup pecans, chopped
- 2 x 1/4 cup unsweetened shredded coconut
- 1/2 tsp salt
- 2 tbsp ground cinnamon
- 1/4 - 1/2 nutmeg, grated
- 1/4 tsp ground clove
Peanut Butter - homemade sweetened

for crunchy peanut butter, chop an additional 1/4 - 1/3 cup peanuts and mix into the peanut butter
- 16 0z (1lb) roasted and unsalted peanuts (without shell)
- 1 TBLSP melted and slightly cooled coconut oil
- 1/8 tsp sea salt
- 2 tsp honey (agave nectar for vegan)

- 1/2 cup coconut flour
- 1/4 cup almond flour
- 1/2 cup coconut oil, melted
- 6 soy free pastured eggs
- 1/2 cup coconut sugar or honey
- (or 1/2 cup xylitol for lower carb)
- 1 cup strong brewed coffee
- 1/4 tsp of baking soda
- 3 Tbsp organic cocoa powder
- 1/2 tsp nutmeg
- 1 tsp cinnamon

Mix the mashed banana with the wet ingredients in a small bowl
- 1 banana- mashed
- 1 tsp molasses (more if you like a strong taste)
- 3 tbs agave ad 1/6tsp stevia
- 2 tsp olive oil
- 1/4 cup soy milk
- 1 cup oats
- 3 tbs buckwheat flour (or other GF flour)
- 1 tsp baking powder
- 1 heaped tsp ground ginger
- 1/2 tsp mixed spice
- 2 tsp ground chia or flax
- Topping- unbaked gingerbread granola (see main blog recipe) and a drizzle of molasses once baked.
