Paleo Pumpkin Bread

Paleo pumpkin bread is so easy to make, and delicious for a snack or dessert! Basically, put everything into a ble
- 1 cup canned pumpkin
- 1/2 medium banana
- 1/4 cups maple syrup
- 1/2 cup almond butter
- 4 dates, pit removed
- 4 eggs
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon sea salt
- 1/4 cup chopped pecans
- 1 tablespoon coconut oil
snack - Maple Cinnamon Roasted Chickpeas

Preheat oven to 350. Mix everything well in a bowl
- 2 cups chickpeas rinsed and dried (I used Eden Food’s BPA free canned chickpeas)
- 1 T coconut oil
- 2 T pure maple syrup
- 1 tsp cinnamon

In a large mixing bowl, combine the egg whites and whisk lightly
- 1/4 cup coconut flour, sifted
- 2 tsp homemade paleo Baking Powder (use standard if not strictly paleo)*
- 12 egg whites (not from a carton)
- 1 tsp sea salt
- Herbs of choice (I've used basil, red pepper flakes, garlic powder and rosemary before)
- Coconut oil/cooking spray
oatmeal - Flax and Blueberry Vanilla Overnight Oats

In an individual food storage container, add the ingredients in the order listed (except for toppings)
- 1/2 cup rolled oats OR quick oats
- 2/3 cup water
- 1/2 cup lowfat vanilla yogurt
- 1 tablespoon flaxmeal
- 1 baby pinch of salt
- blueberries, pecans, brown sugar, and other goodies for topping
cookie - Chewy chocolate quinoa cookies

Mix the peanut butter and date syrup and melt a little in a the microwave on low power if not already drippy
- 1 cup cooked quinoa
- 1/4 cup peanut butter (add a pinch of salt if not salted)
- 1/4 cup homemade date syrup and a pinch of stevia (you could use 3 tbs maple syrup of agave if you prefer)
- 1/4 cup unsweeteneed dessicated coconut flakes
- 1/4 cup cocoa nibs or dark choc chips
- 3 tbs cocoa powder
pudding - dark chocolate gelatin pudding
