1. Put all ingredients EXCEPT the butter into the Vitamix
- 5 large eggs
- 1/2 cup fresh lemon juice (2-3 large lemons)
- 1 1/2 cups granulated sugar
- 1/8 teaspoon salt
- 1/2 cup unsalted butter, room temperature and cut into small pieces

- 3/4 cup coconut flour
- 1 tsp baking soda

- 1/2 1/2 1/2 cup coconut butter or Homemade Coconut Butter. (120g)
- 1 1 2/3 large, very-ripe banana (160g) (For a banana-free version, just use 2/3 cup more coconut butter.)
- 1/2 1/2 1/2 tsp cinnamon (optional)
- 1/8 1/8 tsp salt
- 1/4 1/4 1/4 cup unsweetened or dutch cocoa powder or cacao powder (20g)
- 1/2 1/2 tsp pure vanilla extract
marinade - Honey-Lime Chicken

In a zip-top bag or bowl, mix together the ingredients for the marinade (soy sauce through cilantro); add chicken

- 2 Tbsp honey
- 1 Tbsp olive oil
- juice of one lime
- 2 garlic cloves, minced
- 1 tsp Sriracha
- red pepper flakes, to taste

- Butter, to grease pan
- 12 ounces fusilli pasta (or shells or wide egg noodles -- whatever you like)
- 2 tablespoons olive oil
- 2 cups sliced cremini mushrooms
- 1/3 cup minced shallots (about 2 large shallots)
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 3 tablespoons all-purpose flour
- 3 1/2 cups whole milk
- 3/4 cup grated Parmesan cheese
- 3 tablespoons capers, drained
- 2 5-ounce cans chunk light tuna, drained
- 1/2 cup sour cream
- 1 cup thinly-sliced kale or spinach
- 1 1/2 teaspoons dried thyme
- 1 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 2 tablespoons unsalted butter
- 1/2 cup bread crumbs
- 1/2 cup finely chopped Italian parsley, to top (optional)
