crepes - Gluten Free Crêpes (Xanthan Gum Free)

In a large bowl, place the flour blend and salt, and whisk to combine well
- 1 3/4 cups (245 g) xanthan gum-free gluten free flour blend (162 grams superfine white rice flour + 54 grams potato starch + 29 grams tapioca starch/flour)
- 1/4 teaspoon kosher salt
- 3 eggs (180 g, out of shell) at room temperature, beaten
- 2 tablespoons (28 g) unsalted butter, melted and cooled
- 2 cups (16 fl. oz.) milk, at room temperature
Gluten Free Chocolate Banana Bread

[1] Preheat the oven to 350⁰F
- 1 medium ripe banana, mashed
- 1 large egg, at room temperature
- 1/2 cup prune juice or pomegranate juice
- 1/4 cup canola oil
- 1/2 cup gluten-free flour blend (see below)
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- Add-ins
- 1/2 cup gluten-free semi-sweet chocolate chips
- 1/4 cup each finely chopped nuts, raisins, coconut, and dried cranberries (make sure total equals 1 cup)
- Gluten-Free Flour Blend
- 1 1/2 cups sorghum flour or brown rice flour
- 1 1/2 cups potato starch (not potato flour)
- 1 cup tapioca flour (also called tapioca starch)
- Whisk the ingredients together and store, tightly covered, in a dark, dry place.

Measure and sift together all flours
- 80 grams sorghum flour (about 1 cup)
- 135 grams almond meal/flour (about 3/4 cup)
- 95 grams brown rice flour (about 1 cup)
- 102 grams tapioca flour/starch (about 3/4 cup)
- 65 grams arrowroot starch (about 1/2 cup)

Preheat oven to 350 Combine all dry ingredients together in a large bowl
- to make them lower fat, use these ingredients instead:
- 1 1/4 cup white rice flour
- 1/2 cup brown rice flour
- 1/4 cup and 2 tbsp tapioca flour
- 1/4 cup potato flour
- 1 tsp fine sea salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp xanthan gum
- 1/4 tsp guar gum
- 5 tsp sugar
- 1 cup buttermilk
- 4 tbsp butter, cold and cut into cubes
- 1 egg and 1 egg yolk
- use 1 1/2 tbsp canola oil
- 1 1/2 tablespoons cold cubed butter and
- 1/4 cup more buttermilk

Mix together sugar and butter beat in everything else(really well) - or shove everything in food processor and blit
- 50 g melted butter
- 1 1/3 cups sugar
- juice of 3 large lemons
- 1 tspn finely grated lemon rind
- 3 large eggs + 1 yolk
