Spaghetti Squash Au Gratin

Cut the spaghetti squash in half and remove the seeds
- 1 medium spaghetti squash
- 2 tablespoons butter
- 1 small yellow onion, cut in half and very thinly sliced
- 1/4 teaspoon red pepper flakes, or more if you like it spicy
- 1 teaspoon fresh thyme
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese

Preheat oven to 350 degrees
- 1/2 cup raw walnuts (soak overnight in filtered water)
- 1 tablespoon honey
- 1/8 teaspoon cayenne powder
- 1/4 teaspoon sea salt

Blend the wet ingredients in food processor until very smooth
- 1 medium banana
- 1/2 cup silken tofu
- 1/2 cup mashed chickpeas
- 1/3 cup coconut butter- melted
- 2 tsp vanilla extract
- 1/4 cup agave plus 1/4 tsp stevia
- 1 cup GF flour mix (I used 1/3 cup each of almond meal, buckwheat flour, tapioca flour)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- A pinch salt
- 1/2 tsp cinnamon
- 3 tbs cocoa powder
- Handful dark chocolate chips
- Handful nuts (I used hazlenuts)
Oatmeal - peanutbutter oatmeal with a Fork

Mix the milk and peanut butter in a bowl until well combined (there shouldn’t be any peanut butter clumps)
- 1/2 c. oats
- 1/2 c. milk of choice (I used homemade rice milk)
- 1/2 t. vanilla extract
- 1/4 t. nutritional yeast, optional, but delicious!
- dash salt (you may need a bit more if using an unsalted peanut butter)
- 1 T. natural peanut butter
- 2 Medjool dates, chopped (you can also add 2 teaspoons of honey or maple syrup, or about 16 drops of liquid stevia if you prefer)
- 1/4 t. cinnamon
Peanut Butter Bars

gluten, dairy-free
- 1 16oz. jar organic natural peanut butter (the kind with peanuts listed as the only ingredient)
- 2 organic eggs
- 2 tsp baking soda
- 1 cup organic honey
Cheesy Cauliflower Popcorn

Cut your cauliflower into bite size pieces
- 1 small head of cauliflower
- 1 tablespoon of lemon juice
- 1 tablespoon of nutritional yeast
- 1/2 tablespoon of extra virgin olive oil
- 1/4 teaspoon of paprika powder (you can used smoked too)
- 1/4 teaspoon of Himalayan crystal salt or sea salt
- 2 large pinches of turmeric
- 1 large pinch of chili powder (or more if you like it spicy)
- 5 drops of pure liquid Stevia (optional, or replace with 1 teaspoon of date paste)
- 2 extra tablespoons of nutritional yeast for sprinkling (optional)

Pour 1 1/2 cups of juice into a small sauce pan
- 2 cups fruit juice
- 4 packets Knox Gelatin (other brands are fine, check package size if using a different brand)
- Honey to taste
quickbread - Gluten Free Gingerbread Muffins

Preheat the oven to 350°F
- 1/2 cup honey, or sugar substitute
- 1/2 cup margarine, trans-fat free, soft tub reduced-fat
- 2 egg whites
- 1 cup(s) yogurt, fat-free plain
- 1 Tablespoon lemon zest, grated
- 1 teaspoon vanilla extract
- 2 cups flour, teff, (see tip below)
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ginger, dried
- 1/2 teaspoon cinnamon, ground
- 1/2 teaspoon nutmeg, ground
- 1/4 teaspoon cloves, ground
- 1 Tablespoon ginger, crystallized, chopped

Boil the orange (peel and all) for about 80 minutes
- 1 Valencia orange
- 1/4 cup flaxseed meal (I think arrowroot flour would also work)
- 3/4 cup coconut flour
- 2 tbsp coconut oil
- 1/4 tsp vanilla liquid stevia
- 1/3 cup honey
- 1 tsp baking soda
