nut butter - Toasted Coconut Banana Almond Butter

- 1/4 t. fine sea salt
- 2 T. warm, melted coconut oil
- 1 c. unsweetened, shredded coconut

- 1 1/2 cups sunflower seeds (I buy the ones with the shells removed)
- 1 T oil (I used olive oil)
- scant 1/4 tsp salt
- optional sweetener (I used 1 tsp honey)I know honey is not for strict vegans. You could probably use agave instead.

Preheat the oven to 425°F
- 1 cup white (or brown) rice flour
- 1 cup non-GMO cornstarch (Bob’s Red Mill) (or potato starch)
- 1/2 cup potato starch (or GF cornstarch)
- 1 Tablespoon sugar
- 5 teaspoons gluten-free baking powder (Rumford or Featherweight)
- 2 teaspoons xanthan gum
- 2 teaspoons fine sea salt
- 1/2 cup (1 stick) cold unsalted butter (or dairy-free buttery spread - Earth Balance), cut into pieces
- 2/3 cup buttermilk
- 2 large eggs, lightly beaten
- 2 1/2 tablespoons butter, melted, for brushing
