Date Nut Bread - Connie

Sprinkle baking soda over dates
- 2 cups chopped dates
- 2 tsp. baking soda
- 2 cups boiling water
- 2 T. Crisco shortening
- 2 cups sugar
- 2 eggs
- 4 cups flour
- 1 tsp. salt
- 1 tsp. vanilla
- 1 cup chopped nuts – pecans or walnuts
Wild Rice Casserole - Amy Lo Haake

Brown meat and onions together, add uncooked rice and mix well
- 1 to 1½ lb. ground round
- 3 T. chopped onion
- ⅓ cup well washed wild rice
- ⅓ cup white rice
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- ½ can sherry
- 1 can mushrooms or a handful of fresh ones
- ½ tsp. salt
- ⅛ tsp. each of garlic salt & celery salt
- ½ tsp. onion salt
Springtime Strawberry Salad

Place asparagus in a foil lined pan and sprinkle with olive oil tossing to coat
- 1 lb. fresh asparagus, trimmed and cut into one inch pieces
- 1 T. olive oil
- 1 pkg. fresh spinach
- 2 cups fresh strawberries sliced
- ½ cup toasted chopped walnuts
- ⅓ cup vegetable oil
- 3 T. raspberry vinegar
- 1 tsp. sugar
- ½ tsp. salt
Salisbury Steak with Mushroom Gravy

In a large bowl, combine beef, 1/4 can mushroom soup, bread crumbs, egg, onions, and steak seasoning
- 1 pound lean ground beef
- 1 (10-ounce) can condensed cream of mushroom soup, divided
- 1/2 cup Italian bread crumbs
- 1 egg, lightly beaten
- 1/2 cup frozen chopped onions
- 1 teaspoon steak seasoning (recommended: Montreal)
- 1 tablespoon canola oil
- 2 tablespoons butter, divided
- 1/4 cup cognac
- 1 (8-ounce) package sliced fresh mushrooms
- 2 cups low-sodium beef broth
- 1 (1.2-ounce) packet brown gravy mix
- Cooked rice, for serving
Creamed Chipped Beef - Mother

Frizzle the dried beef torn into pieces in ⅛ butter
- 1 small jar of dried beef
- ⅛ lb. butter
- 2 T. flour
- 2 cups of milk
Pork Oulet - Guy Fieri

In a cast iron Dutch oven, over medium-high heat, add the bacon and cook until just crisp
- • 1/4 pound thick cut bacon, cut into 1/2-inch pieces
- • 3 pounds pork butt, cut into 2-inch by 3-inch pieces
- • 4 bone-in chicken thighs, skin discarded
- • 2 teaspoons salt
- • 3 teaspoons freshly cracked black pepper
- • 1 cup peeled and quartered cipollini onions
- • 1 cup (1/4-inch) diced carrots
- • 1/2 cup (1/4-inch) diced celery
- • 1/4 cup roughly chopped garlic
- • 3 tablespoons all-purpose flour
- • 3 cups low-sodium chicken stock
- • 2 bay leaves
- • 1 teaspoon dried thyme
- • 1/2 teaspoon dried sage
- • 4 (15-ounce) cans cannellini beans, drained
- • 1/4 cup sherry wine vinegar, for garnish
- • 1/4 cup chopped Italian parsley leaves, for garnish
Green Chili - Parke

Brown ground beef and onions and then add garlic
- 1 lb. ground round
- 1 garlic clove
- 2 T. chili powder (or to taste)
- 1 large onion chopped
- 1 can green chilis (whole diced)
- 1 large can whole tomatoes
- 1 can tomato sauce (soup size)
- 2 cans kidney or pinto beans
Sugar and Spice Pecans

In small bowl, combine sugar with spices
- ½ cup granulated sugar
- 4 tsp. cinnamon
- 1½ tsp. ground ginger
- ¾ tsp. ground nutmeg
- ½ tsp. ground cloves
- ½ tsp. cayenne pepper
- 2 egg whites
- 5 cups pecan halves

Buttermilk Pie - Pam

Preheat oven to 425 degrees
- 1¼ cups sugar
- 3 T. flour
- 4 eggs, lightly beaten
- 1 stick butter, melted and cooled
- 1 cup buttermilk
- 1 T. freshly squeezed lemon juice
- 1 tsp. vanilla extract
- zest from 1 lemon
- freshly grated nutmeg to taste (optional)
