Stuffed Shells Florentine - Lynne

Cook shells according to package directions
- 1 jar (29 oz) marinara sauce
- 1 pkg. frozen chopped spinach
- 2 lbs. ricotta cheese
- 1 package (12 oz) shredded mozzarella
- 2 eggs
- 2 T. grated parmesan cheese
- 1 package (12 oz.) jumbo shells

- 3 cups (3 6oz pkgs) chocolate chips
- 1 can Eagle Brand condensed milk
- Dash of salt

Scalloped Potatoes with Cheese - Judy

Preheat oven to 425°. Rub an 11 x 7 inch baking dish with cut sides of garlic halves; discard garlic
- 1 garlic clove, halved
- Butter-flavored cooking spray
- 6 medium peeled red potatoes, cut into ⅛-inch-thick slices
- 2 T. margarine, melted
- ½ tsp. salt
- ⅛ tsp. pepper
- ½ cup (2 ounces) shredded Gruyère cheese
- 1 cup skim milk
Southwest Corn and Bean Salad

Mix corn and black beans together and set aside
- 4 ears of grilled corn or ½ bag of Trader Joe’s frozen grilled corn
- 1 can (15 oz ) black beans drained and rinsed under cold water
- 6 T. corn oil or Enova oil
- 1 ½ T. of balsamic vinegar
- ½ tsp. ground cumin
- ½ tsp. garlic powder or 1 clove garlic minced
- Fresh salad greens
- 3 large tomatoes diced
- Tops of three scallions sliced (I used the whole onion)
- Salt and pepper to taste
- 3 ounces of crumbled Mexican-style Cotija or feta cheese
- 1 cup pinenuts toasted 5 minutes in a 350 degree oven

Caramelized Shallots

- 6 T. (¾ stick) unsalted butter
- 2 pounds fresh shallots, peeled, with roots intact
- 3 T. sugar
- 3 T. good red wine vinegar
- ½ tsp. kosher salt
- ¼ tsp. freshly ground black pepper
- 2 T. chopped fresh flat-leaf parsley

- 2 tsp. cornstarch
- ⅔ cup orange juice
- ⅓ cup Heinz 57 sauce
