Tamale Pie - Mother

Mix first three ingredients together and set aside
- ¾ cup corn meal
- 1½ cups milk
- 1 egg, beaten
- 1pound ground beef
- 1 package chili seasoning mix (Lawry’s)
- 2 teaspoons seasoned salt
- 1 can 16oz tomatoes
- 1 can corn, drained
- 1 can large black olives, drained
- 1 can small green chiles
- 1 cup cheddar cheese, shredded*
Stuffed Pork Chops - Diane

Preheat oven to 325 degrees
- 4 inch thick pork chops
- 1 box cornbread Stove Top stuffing mix
- 1 cup orange juice
- ⅓ cup brown sugar
- 2 T. soy sauce
- Salt and pepper
Pork Chops Supreme - Lemon and Onion

Heat oven to 350 degrees. Sprinkle both sides of pork chops with salt and pepper
- 4 pork loin or rib chops, about 3/4-inch thick
- Salt and coarsely ground pepper to taste
- 4 onion slices, about 1/4-inch thick
- 4 lemon slices, about 1/4-inch thick
- 1/4 cup packed brown sugar
- 1/4 cup ketchup (chili sauce or barbecue sauce may be substituted)
Chopstick Chicken Salad

Whisk together dressing and soy sauce in a small bowl
- 1 cup Hidden Valley Original Ranch Dressing
- 1 T. soy sauce
- 8 cups torn lettuce
- 2 cups shredded cooked chicken
- 1 cup chopped green onions
- 1 can 8oz water chestnuts, rinsed and drained
- ½ cup sliced almonds, toasted
Fake Caesar Salad - Judy

In a large bowl, press 2 cloves garlic
- 1 large bag of romaine lettuce
- 2 cloves of garlic
- 1 medium lemon
- 2 T. vegetable or olive oil (olive oil is best)
- 3 T. shredded or grated Parmesan cheese
- Salt and pepper to taste
