Magic Pan Salad Dressing

Mix all ingredients except vinegar and oil with wisk until well blended
- 1 cup oil
- 1 cup tarragon vinegar
- 1 tsp. tarragon
- ½ tsp. salt
- ⅛ tsp. pepper
- 3 tsp. sugar
- ½ tsp. Dijon mustard
- Spinach and butter lettuce
- 1 can drained mandarin oranges
- 4 or five scallions finely sliced
- 1 small pkg. of slivered almonds toasted
Green Corn Tamale Casserole

Mix flour with small portion of milk until smooth
- 3 green corn tamales
- 1 4oz can green chili peppers
- ¼ lb Velveeta cheese-large cubes
- ¼ cup flour
- 2 cups of milk
- 4 eggs beaten
Baked Hash Browns - Mother

Break up hashbrowns into small pieces in a shallow casserole dish
- 2 pkgs. frozen Ore-Ida hashbrowns (shredded style)
- 1 pint cream or half and half
- ⅛ pound butter
- Salt and pepper to taste
Tostadas with Sour Cream and Green Chilis

This is a Fleetwood family favorite
- 12 tostadas shells
- 3 cups hot refried beans
- ¼ cup grated romano, parmesan, jack or cheddar cheese (our favorite is jack)
- 1 pint sour cream
- 1 small can peeled green chilis chopped
Hidden Valley Chicken Wings

Melt butter. Add vinegar and Tabasco Sauce
- 1 pkg. Hidden Valley Dressing Mix
- ½ cup butter
- 3 T. vinegar
- ¼ cup Tabasco Sauce
Cuban Sandwiches - Diane

In a non stick skillet, heat margarine over low heat
- 2 tsp. margarine or butter
- 4 (8 inch) soft hero or club rolls
- prepared mustard
- 12 ounces sliced deli baked ham and/or turkey breast
- 16 slices kosher dill pickles
- 6 ounces sliced provolone and/or Swiss cheese
- mayonnaise
Escalloped Corn and Cheese Casserole - Manya

Beat egg in 6 cup buttered casserole
- 1 egg, beaten
- 1 cup milk
- 1 ½ cups creamed corn (#2 can)
- 1 cup coarse fresh bread crumbs
- ¼ cup sharp cheddar cheese, grated
Short Ribs - Roy's

Preheat oven to 375 degrees
- 4 servings
- 1/2 cup canola oil
- 4 (10-ounce) beef short ribs (boneless is fine)
- Salt and pepper, to taste
- 1 cup flour
- 3 carrots, chopped
- 2 large onions, chopped
- 1 rib celery, chopped
- 1 cup red wine
- 3 bay leaves
- 2 quarts beef stock
- 10 black peppercorns
- HONEY MUSTARD GLAZE
- 1 cup whole grain mustard
- 1/2 cup honey
- 1/2 cup white wine
- 1/4 cup garlic, chopped
- 1 bunch basil, leaves chopped
Blueberries with Creamy Banana Sauce

In food processor or blender combine banana, ricotta and all remaining ingredients except blueberries
- 1 (oz.) package Driscoll’s Blueberries, rinsed and drained
- ⅓ cup skim or part-skim ricotta cheese
- 1 teaspoon lemon juice
- ⅓ medium banana, peeled and sliced
- 2 tablespoons plain yogurt
- 1½ tablespoons sugar
Portobello Mushroom Lasagna - Ina

Preheat the oven to 375 degrees F
- Kosher salt
- Good olive oil
- ¾ pound dried lasagna noodles (I use the no boil variety)
- 4 cups whole milk
- 12 T. (1½ sticks) unsalted butter, divided
- ½ cup all-purpose flour
- 1 tsp.freshly ground black pepper
- 1 tsp. ground nutmeg
- 1½ pounds portobello mushrooms – add more mushrooms
- 1 cup freshly ground Parmesan
