Chili Corn Spoonbread
By zoniesis
Mix milk, oil and eggs together
- 1 cup yellow corn meal
- ½ cup oil
- ¾ cup milk
- 2 eggs
- ½ tsp salt
- ½ tsp. soda
- 1 16 oz can cream style corn
- 1 4oz can diced green chilis
- 2 cups grated cheddar or longhorn cheese
King's Ranch Chicken

Saute onion, garlic and celery in a nonstick pan coated with cooking spray
- 2 cups chicken breast meat, cooked and chopped or shredded
- 1 can reduced fat cream of mushroom soup
- 1 can reduced fat cream of chicken soup
- 1 can Rotel tomatoes (I use the “milder” version being of tender tongue)
- 8 corn tortillas cut in fourths
- 1 cup Sargento light shredded Mexican cheese or brand of choice
- 1 onion chopped
- 4 cloves garlic minced
- ½ cup chopped celery
- 1 small can of sliced black olives
- salt and pepper to taste
Fish Tacos - Elle Kreiger

In a small bowl, whisk together the oil, lime juice, salt and pepper
- Fish:
- 2 T. olive oil
- 2 T. freshly squeezed lime juice
- ¼ tsp. salt
- Freshly ground black pepper
- 1 pound white flaky fish fillet, like tilapia or halibut
- Chipotle cream:
- ½ cup plain nonfat yogurt
- 2 T. mayonnaise
- 2 tsp. chipotle pepper, in adobo sauce
- 8 (6-inch) corn tortillas
- 1½ cups shredded green cabbage or lettuce
- ½ cup corn kernels (thawed if frozen)
- ¼ cup fresh cilantro leaves
- Lime wedges
Country Fried Steak with Mushroom Gravy - CL

Combine 3 tablespoons milk and egg whites in a shallow dish, stirring with a whisk
- 3 tablespoons fat-free milk
- 2 large egg whites
- 1/3 cup all-purpose flour
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 4 (4-ounce) sirloin cubed steaks
- 2 teaspoons vegetable oil
- 2 2/3 cups frozen mashed potatoes (such as Ore Ida)
- 1 1/3 cups fat-free milk
- 2 cups mushrooms, quartered
- 2 1/2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1 (14-ounce) can fat-free, low-salt beef broth
Mousseline Sauce for Pears

To well beaten egg yolks add the sugar and beat until the mixture is lemony in color
- 4 egg yolks beaten
- ½ cup of sugar
- ¼ cup brandy
- Very small pinch of salt to taste
- 1 tsp. orange flower water (can be found in gourmet markets or Mediterranean stores)
- ½ to ¾ cup of whipping cream whipped ( or 1 small carton of Cool Whip)
- 1 can of pear halves or poached pears if desired
Zucchini Gratin - Ina

Preheat the oven to 400 degrees F
- 6 T. (¾ stick) unsalted butter, plus extra for topping
- 1 pound yellow onions, cut in ½ and sliced (3 large)
- 2 pounds zucchini, sliced ¼-inch thick (4 zucchini)
- 2 tsp. kosher salt
- 1 tsp.freshly ground black pepper
- ¼ tsp. ground nutmeg
- 2 T. all-purpose flour
- 1 cup hot milk
- ¾ cup fresh bread crumbs
- ¾ cup grated Gruyere
Rum Spiked Grilled Pineapple

Combine the sugar and rum in a microwave-safe bowl
- ¼ cup packed light brown sugar
- ¼ cup dark spiced rum (such as Captain Morgan’s)
- 1 pineapple, peeled, cored, halved lengthwise, and sliced lengthwise into 12 wedges (about 1½ pounds)
- 1 T. butter
- 2 T. sweetened coconut, toasted
- Low-fat vanilla ice cream (optional)
Chicken Livers Henri

Mix shallots, garlic and parsley together and set aside
- 6 whole chicken livers cut in half
- 1 clove of garlic minced
- 3 finely chopped shallots
- chopped parsley
- 3 T. butter (sweet is preferred)
- 2 slices sourdough bread toasted
Mexican Layered Chicken - Diane

Preheat oven to 350°F. Coat a lasagna pan with cooking spray
- 1 serving olive oil cooking spray (5 one-second sprays per serving)
- 2 pound uncooked boneless, skinless chicken breast(s) (or one rotisserie store bought chicken)
- 30 oz canned black beans, rinsed and drained
- 3 cups fat-free sour cream
- 2 cups shredded reduced-fat Monterey Jack cheese, or Mexican-style cheese blend
- 8 oz chopped green chilies, two 4-oz cans
- 2 tsp. ground cumin
- ½ tsp. black pepper
- 12 medium corn tortilla(s), cut into 2-inch strips
- 1 cup salsa, mild, medium or hot
Salsa Couscous Chicken

While rice is cooking, heat oil in large skillet over medium high heat until hot
- 3 cups hot cooked rice or couscous
- 1 T oil
- ½ cup blanched slivered almonds toasted
- 2 cloves of garlic, minced
- 8 chicken thighs skin removed
- 1 jar Old El Paso Thick n Chunky Salsa
- ¼ cup water
- 2 T. (or more) golden raisins
- 1 T. honey
- ¾ tsp.cumin
- ¾ tsp. cinnamon
