Three Bean Salad

Drain the beans well and set aside
- 1 can kidney beans
- 1 can green beans
- 1 can wax beans
- ¾ cup sugar
- ½ cup oil (vegetable or canola)
- ½ cup vinegar
- 1 tsp. salt
- 1 tsp. pepper
- Minced onion, celery and green pepper to taste.
Roasted Asparagus with Parmesan

Preheat the oven to 400 degrees F
- 2½ pounds fresh asparagus (about 30 large)
- 2 T. good olive oil
- ½ tsp. kosher salt
- ¼ tsp. freshly ground black pepper
- ½ cup freshly grated Parmesan
- 2 lemons cut in wedges, for serving
Green Chili Eggs

Layer chilis with cheese in the bottom of a buttered 9 x 13 inch baking dish
- 1 8 oz. can chopped green chilis
- 1 lb. grated Monterey Jack cheese
- 12 eggs
- 1 16 oz. carton of sour cream
Pumpkin Custard - Mother

Beat all ingredients together until smooth
- ¾ cup light brown sugar packed
- 5 eggs
- 1 tsp. cinnamon
- ½ tsp. ginger
- ¼ tsp. nutmeg
- ⅛ tsp. cloves
- ½ tsp. salt
- 1 lb can pumpkin (2 cups)
- 1 cup heavy cream
Stuffed Pork Chops - Lynne Storms

Cook shells according to package directions
- 1 jar (29 oz) marinara sauce
- 1 pkg. frozen chopped spinach
- 2 lbs. ricotta cheese
- 1 package (12 oz) shredded mozzarella
- 2 eggs
- 2 T. grated parmesan cheese
- 1 package (12 oz.) jumbo shells
Chili Corn Spoon Bread - Quick and Easy

Mix cornbread as directed on package decreasing milk a little bit to account for the the creaminess of the corn
- 1 pkg. Jiffy Cornbread Mix
- 1 egg
- ⅓ cup milk (I use a bit less)
- 1 small can diced green chilis
- 1 small can (7oz) creamed corn or ½ of a large can.
- ½ cup grated cheddar cheese or Mexican blend cheese (add more if desired).
Creamed Chicken Enchiladas - Nadine

Mix chicken soup with ½ cup water
- 2 cans cream of chicken soup
- 1 16oz carton of sour cream
- 2 bunches green onions chopped
- 1 lb grated cheddar cheese
- 2 doz corn tortillas
- 1 small can diced green chilies
- 2 cups cooked shredded chicken (I just purchase a store rotisserie chicken)
- 1 14 oz can Old El Paso green enchilada sauce* (see note below)
Stuffing for Cornish Hens - Mother

Soak raisins in cognac for 10 or 15 minutes and then sauté them in the butter
- ½ cup white raisins
- ¼ cup cognac
- 6 tsp. butter
- ¼ cup chopped shallots
- ½ T. salt
- 1½ cups cooked white rice (or brown rice if you wish)
- ¼ chopped pistachios
Green Chilis and Welsh Rarebit - Mother

Remove seeds and membrane from the chilis and stuff each with a finger of Jack cheese
- 1 large can Ortega whole green chilis
- Jack cheese cut into finger size pieces
- 1 box of Stouffer’s Welsh Rarebit or homemade Welsh Rarebit
Rack of Lamb - Ina 5 star

Preheat the oven to 450 degrees F
- 3 small or 2 large racks of lamb, frenched
- Good olive oil
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups loosely packed fresh parsley leaves
- 1 tablespoon chopped garlic cloves (3 cloves)
- 1 cup fresh white bread crumbs
- 2 teaspoons grated lemon zest (2 lemons)
- 4 tablespoons (1/2 stick) unsalted butter, melted
