Steak Tips with Mushroom-Onion Gravy

After some initial tests, we figured out how to make a steak tips with gravy recipe in one skillet
- 1 tablespoonsoy sauce
- 1 teaspoon sugar
- 1 1/2 pounds sirloin steak tips, trimmed of excess fat and cut into 1 1/2-inch chunks (see note)
- 1/4 ounce dried porcini mushrooms, rinsed well
- 1 3/4 cups low-sodium beef broth (see note)
- Table salt and ground black pepper
- 2 tablespoons vegetable oil
- 1 pound white mushrooms, stems trimmed, caps wiped clean and cut into 1/4-inch slices (see note)
- 1 large onion, halved and sliced thin (about 1 1/2 cups)
- 1 medium garlic clove, minced or pressed through garlic press (about 1 teaspoon)
- 1/2 teaspoon minced fresh thyme leaves
- 4 teaspoons unbleached all-purpose flour
- 1 tablespoon chopped fresh parsley leaves
Breakfast Pizza

Preheat oven to 400°. Place pizza stone in oven
- Pizza Dough:
- 1/2 cup bread flour
- 1/2 cup whole wheat flour
- 1 1/2-2 cups flour
- 1 tablespoon honey or sugar
- 1 envelope fast rising yeast (or 2 1/4 teaspoons fast rising yeast)
- 1 teaspoon salt
- 1 cup hot water
- 2 tablespoons oil
- cornmeal for dusting
- Pizza:
- 1/2 lb cooked bacon, crumbled
- 4-6 eggs, scrambled
- 1/2 cup shredded cheddar/jack cheese
- White Sauce:
- 2 Tbsp. reserved bacon grease
- 1 Tbsp. cornstarch
- 1/2 cup milk
- 1/2 Tbsp. Alpine Spice
Root Beer BBQ Pork (Slow Cooker)

In a small bowl stir together the salt, oregano, garlic powder, black pepper, chili powder and paprika
- Pork & Rub:
- 3 tablespoons coarse kosher salt
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 1 tablespoon black pepper
- 1 tablespoon chili powder
- 1 tablespoon paprika
- 2 1/2 lbs country-style pork ribs or 2 racks pork baby back ribs, trimmed & membrane removed
- 1 large yellow or white onion, sliced
- 1/2 cup root beer
- BBQ Sauce (I half the BBQ sauce recipe & it is plenty):
- 1 tablespoon olive oil
- 1 1/2 cups finely chopped onion
- 1 tablespoon minced fresh garlic
- 1 cup root beer
- 1 1/2 cups BBQ sauce
- 1/2 cup apple cider vinegar
- 1/4 cup packed brown sugar, light or dark
- 1 tablespoon minced chipotle in adobo sauce (leave out the seeds for less heat)
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste (I didn't need any)
Bars: Sugar Cookie Bars with Frosting

Using a mixer, cream the butter and sugar together until fluffy
- Bars:
- 1 cup unsalted butter, room temperature
- 2 cups sugar
- 4 eggs
- 2 teaspoons vanilla
- 5 cups all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- Frosting:
- 1 cup butter, softened
- 8 cups powdered sugar
- 1/4-1/2 tsp. salt
- 8-10 Tbls. milk
- 4 tsp. vanilla

Peanut Butter and Chocolate Candy Bar Trifle

For peanut butter caramel sauce: In a medium-sized (2-3 quart) pan combine the butter, sugars and milk
- For trifle:
- 1 baked, un-frosted chocolate cake, homemade or from a cake mix (you won’t use all of it)
- 3-4 cups chopped chocolate & peanut candy bars (Snickers, Reese’s, Payday, Baby Ruth, or other peanut butter candies)
- 2 cups heavy cream
- 1 Tbsp granulated sugar
- For peanut butter caramel sauce:
- 1/4 cup butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup evaporated milk, plus more if needed for thinning the sauce (can also substitute whole milk, half and half, or cream)
- 1/4 cup peanut butter
- 1 tsp. vanilla extract

- 1 (.25 ounce) package active dry yeast
- 1/4 cup warm water (110 degrees F/45 degrees C)
- 1 cups all-purpose flour
- 1 cups white sugar
- 1 cups milk
Biscuits: Herbed Buttermilk Biscuits

Position a rack in the center of the oven and heat the oven to 450°F
- Other delicate fresh herbs (tarragon, chives, chervil) will work in this recipe in place of the dill. For a browner crust brush the tops of the biscuits with melted butter before baking.
- 9 oz. (2 cups) unbleached all-purpose flour; more as needed
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. table salt
- 1 Tbsp. sugar
- 1 Tbsp. chopped fresh dill (or herb combo) or 1 tsp. dried dill
- 3 Tbsp. vegetable shortening or lard, well chilled and cut into small chunks
- 2 Tbsp. salted butter, well chilled and grated on a box grater
- 3/4 cup plus 2 Tbs. buttermilk
- 1 cup shredded cheddar cheese (optional)
